Another wonderful Saturday morning Naked Larder Brunch Club with Qigong by

Well summer is here.. Or at least rapidly on it’s way so it’s time to be to protect our skin with sunscreen.
But let’s not be selfish here. It’s not just us, we should also think about protecting everything around us.

Truly delicious broccoli salad with a creamy dressing and almond bacon from
Simple to prepare and the leftover almonds make a great snack!

Ingredients:

300g broccoli (tenderstem or regular chopped into bitesize pieces)
6 tbs vegan mayo
4 tbs nutritional yeast
1 1/2 tbs apple cider vinegar or lemon juice
2 tsp maple syrup
2 tsp white miso
2 tsp Dijon mustart
1/2 tsp garlic powder
3/4 tsp smoked paprika
1 tsp olive oil

Method
Cut broccoli into bitesize pieces and steam until tender, rinse and refresh with cold water.
Combine vegan mayo, mustard, nutritional yeast, miso, acid, maple syrup, garlic powder and ½ tsp smoked paprika in a small bowl. Mix with a whisk into a smooth dressing.
Dress broccoli well and top with almond bacon:

Almond Bacon Ingredients:
(will make more than you need for the salad but keep to use on other salads or snack on)
4 tsp soy sauce
4 tsp mild olive oil
4 tsp maple syrup
1/2 tsp tomato puree
1 tsp smoked paprika
140g almonds

Preheat oven to 100C and line large baking tray with baking paper.
Cut almond in half lengthwise.
Combine soy sauce, oil, maple syrup, tomato paste and smoked paprika in a medium bowl. Whisk together. Add almonds and stir well to coat.
Spread the almonds on the prepared tray in a single layer. Bake for 15 minutes. Stir well and return to oven for another 10-15 mins and carry on baking until almonds look more or less dry.
Take the tray out of the oven and let almonds cool – they will appear soft initially but will crisp up when cold. They are best freshly made but can be stored in a air-tight jar for a week or so.
