The season of salads is approaching! π₯
Get your head start and try our SUPER FOOD salad, packed with nutrients and flavours to keep you filled up and full of energy. β‘
The recipe serves 2 and takes 30 minutes to cook at 180C.
Ingredients: β
β’ 2 sweet potatoes
β’ 2 cooked beetroots
β’ 120g of rocket
β’ 130g of cooked quinoa
Dressing: β
β’ 1/4 cup Dijon mustard
β’ 3 tbsp yogurt or mayonnaise
β’ 3 tbsp of Honey Heaven CBD honey
Toppings: β
β’ Handful of walnuts or almonds
β’ Handful of cranberries
β’ Handful of pumpkin seeds
β’ Handful of edamame beans
β’ Pomegranate seeds
β’ Pear slices (optional)
Procedure
1. Mix all the ingredients of the dressing and set aside
2. Chop sweet potatoes and beetroot, put on a tray, drizzle with olive oil and salt. Bake for 30 min at 180C. Let cool.
3. Assemble salad by mixing rocket and quinoa, layer on a big dish and add sweet potatoes, beetroot, all the toppings youβre using and finish up with a drizzle of dressing
