Homemade granola in the airfyer

160g oats
30g walnuts
20g flaked almonds
10g chia seeds
60g mixed seed ( I added extra pumpkin )
15g desiccated coconut
40g dried cranberries
45g maple syrup
25g dark chocolate chips

Airfyer 160c for 15 mins stirring occasionally
I added the choc chips at the end

Smoky chorizo cod & crispy potatoes

Serves 2
Cod fillets (2pcs)
Cayenne pepper (0.5tsp)
Shredded kale (120g)
smoked paprika (2tsp)
Mayonnaise (25ml)
Diced chorizo (100g)
Garlic clove
Red pepper
Lime
Red onion x2
White potato x4

Preheat oven 200’c fan
Chop potatoes with skin on for extra fibre
Add to baking tray with half the paprika & cayenne pepper, drizzle with olive oil & pop in oven for 10 mins
Peel & chop red onion into wedges, chop pepper into bite size pieces, add to potatoes, give a good mix up and return to oven for 15 mins.
Add the cod to a bowl with the remaining paprika & cayenne pepper with a drizzle of olive oil & let marinate.
Peel & chop garlic & add to a bowl with the mayo & juice of half a lime… this is your aioli
Heat a frying pan with a drizzle of olive oil, once hot add the smoky cod & diced chorizo… cook for 5-7 mins
Heat a separate pan with a drizzle of olive oil & add the shredded kale with a pinch of salt for 5 mins
Serve the potatoes, onions & pepper over the kale & top with the smoky cod & chorizo & drizzle with the aioli

Here’s a little tiramisu overnight oats recipe for you all

40g oats
15g vanilla protein powder
140g fat free greek yogurt
1tsp cacao powder
Espresso
1tsp chia seeds
5g maple syrup

Macros
330 cals
42g carbs
31g protein
6g fat

Blueberry & banana breakfast muffins 💙
Makes 12
91 cals per muffin

2 eggs
2 tbsp brown sugar
1 tsp vanilla essence
1 tsp cinnamon
1 banana
150g Oats
50g blueberries
Juice of a lemon

Mix altogether & sprinkle with few oats,bake at 180’c for 20 mins, great for breakfast on the go or that 3pm snack

Roasted cinnamon sweet potato chips

Preheat oven to 200’c
500g sweet potatoes cut into chips ( I kept skins on for extra fibre )
Pinch of salt
2tsp cinnamon

Coat the chips with olive oil, salt & cinnamon, either pop in air fryer or oven first 40/45 mins until crispy & golden

Roasted salt & vinegar chickpeas

A great healthy snack full of protein, fibre & vitamin D

Drain & rinse a can of chickpeas, pop in a saucepan pan with 250ml of vinegar , bring to the boil, take off heat & soak for 40 mins.
Add to a baking tray with a tablespoon of olive oil & salt, mix well & cook for 40 mins in oven 200’c ( turning every 10 mins)
Let cool & enjoy 😋
