Got bored and decided to run a little rib experiment. 😅🔥

I cooked **3 racks of ribs, 3 different ways** just because I was curious and wanted to see how much difference the cooking method really made.

One rack was cooked with **actual cherry wood**, one was done on the **pellet grill**, and one was cooked in the **oven**. Same general idea, same goal — just three different approaches side by side.

And honestly? For all the people and YouTube videos saying pellet smokers give you just as much flavor as real wood… I’m calling it now: **actual wood wins, and it’s not even close.**

The cherry wood ribs had the best flavor by far. Deeper smoke, better character, and that real wood-fired taste you just don’t get the same way from pellets. The pellet grill rack still turned out good, and I’ve definitely gotten better color on my pellet smoker before, so I’ll admit the presentation there was probably user error this time.

The oven ribs looked nice too and had that saucy, glossy finish, but flavor-wise they obviously didn’t have the same smoke depth.

Final verdict: all three were edible, but the **cherry wood ribs were the clear winner**. Pellet grills are convenient, ovens work in a pinch, but real wood smoke takes it by a mile.

Alder. Probably the most underrated smoke woods there is. We planted our Alder many years ago as a sustainable crop specifically to meet the demand coming from our local Eastern European farm workers who wanted a little bit of the taste of home whilst in Lancashire. These days it is our best seller as many Brits have given it a go and prefer the milder, more controllable flavour.
Today we were processing Alder splits and chunks for the 2028 season.

Cheesecake smoked on Apple wood. Mmmm

Barbecue doesn’t always have to mean brisket and ribs. A smoked cheesecake can absolutely earn a spot beside the meat.

This one was cooked with apple wood, giving the cheesecake a subtle layer of smoke without overpowering the rich, creamy filling. The browned edges and rustic top already look good on their own, but the strawberry topping is what really finishes it.

Fresh strawberries were simmered with sugar and water until soft and syrupy, then bourbon and real homemade vanilla were added for extra depth. Spoon that glossy sauce over a thick slice, add a few fresh berries, and it turns into a dessert that looks just as impressive as anything coming off the smoker.

There wasn’t really a strict recipe involved—more of a method shaped and adjusted along the way—but the final result was definitely worth repeating.
