Is anyone else excited for autumn ๐Ÿ‚ and experimenting with sweet potato soup recipes?!

This creamy sweet potato soup with crunchy chickpeas, lemon & red pepper looks delicious! ๐Ÿ 

Ingredients (6 bowls):
1kg sweet potatoes
2 cubes of vegetable broth
800ml water
200ml coconut milk
1 red pepper
80grams chickpeas
1tbsp smoked paprika powder
1tsp herbs
1 red onion
2 cloves of garlic
1 spring onion
2 lemons
Olive oil

1. Chop the onion and finely slice the garlic and red pepper. Peel the sweet potatoes and cut into cubes. Cut the spring onions into thin rings.
2. Heat olive oil in a large soup pan and add in the the onion. Next add the garlic and red pepper and cook for 2 mins.
3. Add the sweet potato and cook for a further 3 mins. In the meantime, boil the water and add this to the pan. Add the broth too. Let the soup for 20-25 min with the lid on.
4. Rinse the chickpeas and damp dry with paper. Mix the chickpeas with a dash of olive oil, smoked paprika powder and mixed herbs. Fry in a frying pan for few minutes until crispy.
5. Blend the soup until smooth then add the coconut milk and lemon juice.
6. Serve the soup in bowls and garnish with the crunchy chickpeas, spring onion, lime juice and red pepper. ๐Ÿฅฃ

This homemade, no churn sweet potato ice cream from Claire Gregory]] is the perfect heatwave treat. โ˜€๏ธ With a spice sweet potato and vanilla swirl topped with toasted marshmallows, this ice cream is every bit as tasty as it is easy to make. ๐Ÿฆ๐Ÿ

Spread your mini marshmallows out on a parchment paper lines baking sheet. If you have a chefโ€™s torch, you can use that to gently toast the marshmallows.
If not, you can grill them to toast them. Just be sure to watch them closely. Allow the marshmallows to cool completely on the baking sheet.

In the bowl of a stand mixer, whip the heavy whipping cream until it holds soft peaks. Add the sweetened condensed milk and vanilla extract, and continue beating until mixture returns to holding soft peaks. Pour half of the ice cream base into a large bowl. Gently fold in the sweet potato puree, cinnamon, and ginger until completely combined.

Pour the ice cream into a parchment paper lined loaf pan, alternating between the vanilla and sweet potato ice cream, sprinkling in toasted marshmallow as you go. Allow to set in the freezer for 8 hours then enjoy! ๐ŸŽ‰

Fatherโ€™s Day brunch inspo โฌ‡๏ธ

Sweet potato black beans with shake of hot sauce ๐Ÿ 

Ingredients:
1 sweet potato, scrubbed, not peeled
400g tin black beans/ any beans
3+ eggs, however many you want/can fit
2 fat garlic cloves, finely chopped
1 tbsp butter, ghee or oil
1 red onion or spring onions, chopped
1 tsp ground cumin
1.5 tsp smoked paprika
Pinch chilli flakes /fresh chilli
To serve, if you like.... coriander/squeeze of lime/ feta/garlic, yoghurt and a shake of hot sauce

Preheat the oven to 220C & roast the chopped sweet potatoes in butter & salt & pepper for 20 minutes until just tender, toss halfway through. Meanwhile in a large ovenproof pan fry most of the onions, garlic, spices & salt & pepper for 5 mins. Add the drained black beans to the pan, stir and let
everything fry together for a minute then add the roasted sweet potatoes & gently mix. Make 3 - 4 gaps as best you can & crack the eggs in and season them. Pop back in the oven for about 5 minutes until the whites are set and the eggs are yolky. Serve straight away with the rest of the onions and fresh coriander & any extras on top. ๐Ÿงก

This tasty plant based vegan sushi roll from Katie] is loaded with sweet potatoes and other healthy vegetables! ๐Ÿ ๐ŸŒฑ

INGREDIENTS:

For the sushi roll:
* 2 cups sushi rice
* 1 sheets nori
* 1 sweet potato
* 3 carrots
* 2 cucumbers
* 1 avocado

For the sauce:
* 1/4 cup tahini
* 2 tbsp coconut aminos
* 2 tbsp sriracha
* 1 tbsp minced ginger
* 2 cloves minced garlic
* water

INSTRUCTIONS:

To make the sushi rice:
* Add the rice and doubled amount of water to your pressure cooker/rice cooker along with the rice vinegar. As soon as rice is finished place in the fridge/freezer to cool. Preheat oven to 200 degrees. โ€จ
Sushi:
* Julienne your sweet potato and place on a baking sheet. Bake for 20 minutes.
* Julienne your cucumber and carrot, and thinly slice your avocado.
* To make sushi roll simply spread the rice over the nori, add carrots, cucumber, avocado and cucumber. Roll using your sushi roller and place in the fridge to cool while you make the sauce.โ€จ
Sauce:
* To make the sauce simply whisk all sauce ingredients together.
* To serve cut slices starting in the middle and working to the edges. Serve and enjoy!
