One minute at the hive entrance—where the magic really happens 🐝

During the spring honey flow, forager bees return loaded with fresh nectar from blooming flowers. But nectar isn’t honey… yet.

At the entrance, you can see worker bees fanning their wings to ventilate the hive. This airflow helps evaporate excess water from the nectar, gradually thickening it into the golden honey we all love.

Inside the hive, other bees continue the process—passing nectar from bee to bee and storing it in cells, where it will be further dried and eventually sealed with wax once it’s perfect.

It’s an incredible, perfectly coordinated system powered by thousands of tiny workers all doing their part.

Today’s sunshine wasn’t just a gift for us — it was a big moment for the bees too. ☀️🐝

After weeks of cold and rainy winter weather, the first mild, sunny days give the colony a chance to leave the hive for short, refreshing flights. These early outings help them stretch their wings, reorient themselves, and reset after being clustered together through winter.

It's a great sign that the colony has come through winter strong and is beginning to wake up.

On warmer February days, they may even begin collecting small amounts of early pollen from blooms like snowdrops, crocus, winter aconite, and hellebores — some of the first flowers to brighten the landscape. That fresh pollen is an important boost as the queen slowly increases egg laying and the colony prepares for spring buildup.

There’s something special about seeing that first burst of activity in the apiary. Spring is closer than we think and we are excited!

🤧 Got a cold? Try some honey 🍯

If winter has you dealing with a sore throat or an annoying cough, a spoonful of honey might help more than you think.

A review of studies published in BMJ Evidence-Based Medicine found that honey may ease symptoms of upper respiratory infections like colds—especially cough frequency and severity.
Researchers reviewed 14 studies with nearly 1,800 people and found honey often worked better than common treatments like cough suppressants and antihistamines. In some cases, symptoms even improved a day or two faster.

While honey isn’t a cure, it does have antimicrobial properties and is considered a safe, soothing option for adults (⚠️ not for children under 1 year old).

🍋 Easy Lemon-Infused Honey Recipe

1️⃣ Thinly slice fresh lemons
2️⃣ Place slices in a clean jar
3️⃣ Pour honey over the lemons until fully covered
4️⃣ Seal and let sit for at least a few days (longer = stronger flavor)

Use the syrup in warm herbal teas, hot water, or even homemade lemonade for a soothing boost.

Why Honey Never Really Goes Off – But Still Has a “Best Before” Date

Honey is one of the few natural foods that can last indefinitely. Archaeologists have even discovered jars of perfectly edible honey in ancient Egyptian tombs — thousands of years old! This incredible longevity comes from honey’s unique composition: it contains very little moisture and has a high concentration of natural carbohydrates, creating an environment where bacteria and mould simply can’t grow. It also contains mild acids and natural enzymes that help preserve it.

Over time, honey may change in appearance and texture. It can become thicker or start to crystallise — a completely natural process where tiny crystals form as part of its maturation. This doesn’t mean the honey has spoiled; it’s simply taken on a different form.
It is in fact a very good indicator that the honey in your jar is in fact pure, unadulterated honey.
Crystallised honey can easily be returned to a smooth, liquid state by gently warming the jar in a bain-marie.

Even though honey can last indefinitely, UK food regulations require all pre-packed foods to display a “best before” date. This isn’t an expiry date, but rather a guide to quality. Many beekeepers choose to label their honey with a best before date of up to five years from bottling, even though it remains perfectly safe and tasty well beyond that.

So, if your honey looks cloudy or has started to set, don’t worry — it’s still as good as ever. Honey doesn’t really go off; it just changes with time.

Well...we are now oficially entering the winter season.
Mouse guards are on and we are starting to complete preparations for over-wintering the hives.
Mouse guards are the first line of defence against mice and other small rodents trying to enter the hives and seek shelter and food. Should they gain access, they can easily destroy an entire hive by chewing through all the winter resources as well as nesting inside.
These are placed at the entrance of each hive and while bees still have plenty of access in and out, this fairly simple piece of equipment is an invaluable tool that we use unequivocally every year.
