Cheese and wine. The perfect combo!

Wee Comrie is an ideal pairing for white wines that offer good structure, abundant flavour, freshness, and pleasant acidity, such as Pinot Gris, Pinot Blanc, Gewürztraminer, or Sylvaner. 

It's a standout on any cheeseboard. 

It’s also delicious on toast, perfect for lazy weekend breakfasts and starting a debate with the family as to what it’s called. Is it roasted cheese? toasted cheese? Or cheese on toast?

I love making cheese, but I also love history and cheese has a lot of it.
The production of cheese predates recorded history but it was probably discovered by accident over 7000 years ago.
This most likely happened when milk stored in animal stomachs mixed with the natural rennet inside, breaking down the proteins in the milk and causing them to separate.
People soon realised the curds were not only tasty but lasted a lot longer than fresh milk. As people migrated to Europe from the Middle East they brought the curds and cheese making knowledge with them.

I find it pretty amazing to think that something discovered so long ago is now something I get to keep experimenting with, yet the method is still the same.

At Strathearn cheese, we make our butter by hand from the freshest cream. First, we culture it and let it slowly mature over the weekend in our maturing room, transforming it into rich, tangy crème fraîche.

Then we churn it in small batches, salt it, shape it by hand, and then finally wrap them to order. The butter is creamy, with the beautifully flavour of the crème fraîche that makes it worlds apart from the supermarket stuff.

Perfect thickly slathered on a warm slice of sourdough, used to finish a steak or tossed through season veg.

And nothing goes to waste, the buttermilk is shared with staff and friends, to make the most delicious home baking.
