🍂 Seasonal Spotlight Recipe: Jerusalem Artichoke & Apple Warm Salad
Sweet, nutty, and gently earthy—this dish brings out the best in Jerusalem artichokes with a fresh, autumnal twist.
Ingredients (serves 2–3):
• 400g Jerusalem artichokes, scrubbed & sliced
• 1 crisp apple (e.g. Cox or Braeburn), thinly sliced
• 1 small red onion, finely sliced
• Handful of rocket or mixed leaves
• 2 tbsp olive oil
• 1 tbsp apple cider vinegar
• 1 tsp honey (or maple syrup)
• Small handful toasted walnuts or seeds
• Salt & black pepper
Method:
1. Preheat oven to 200°C (180°C fan).
2. Toss Jerusalem artichokes in olive oil, salt, and pepper. Roast for 30–35 minutes until golden and tender.
3. In a small bowl, whisk olive oil, apple cider vinegar, and honey.
4. In a large bowl, combine warm artichokes, apple slices, and red onion.
5. Gently toss with dressing, then fold through the leaves.
6. Finish with toasted walnuts or seeds.
To serve:
Best enjoyed warm, when the artichokes are still slightly crisp on the edges.
Seasonal note:
Pairs beautifully with goat’s cheese or served alongside roasted squash.
