Step 2: Season Simply

Generously season with sea salt and black pepper. Optional: a pinch of garlic powder or paprika. Season 30 minutes before cooking to enhance flavour.

Step 3: Cooking Steps

Room Temperature: Let steak sit out 30 minutes before cooking.

High Heat: Use a smoking-hot cast iron skillet with neutral oil.

Sear: Cook for 2-3 minutes per side for a crust.

Doneness: Check with a thermometer:

Rare: 50°C
