Introducing 🧀 Ubriaco Rosso 🧀 our Cheese of the Month for June!
Ubriaco Rosso has its origin in the Veneto region of Northern Italy. Legend states that the technique dates back to World War 1, when local farmers needed to hide their wheels of cheese from Austro-Hungarian soldiers. Their favourite method was to plunge the cheese into barrels containing red wine and pomace, and when the wheels were retrieved the cheeses had completely transformed in both appearance and flavour.
Rooted in necessity and survival, the production of Ubriaco Rosso has evolved into a controlled artisanal practice. Young cheese wheels are submerged in barrels filled with Raboso, Merlot or Cabernet, where they soak from weeks to months. During this time the wheels absorb the characteristics of the surrounding liquid. The cheese is then dried and aged for a further 6 to 10 months; resulting in a purple exterior with a pale, ivory interior. Its texture is firm and slightly crumbly with a crystalline bite. The cheese itself is highly fragrant, sweet and fruity, with notes of raisin, fermented grapes and a sharp, tangy bite.
