Dark Chocolate – More cacao, more character
Rich, intense and unmistakably indulgent, dark chocolate begins with one remarkable ingredient: cacao.
Cacao has an ancient history. The cacao tree is native to the tropical Americas, and cacao has been consumed for thousands of years.
What does 75%, 80%, 90% and 100% mean?
The percentage on a dark chocolate bar indicates the proportion of ingredients derived from cacao beans, such as cocoa mass and cocoa butter. Generally, the higher the percentage, the more intense the cacao flavour and the lower the proportion of added sugar compared with sweeter chocolate varieties.
A higher percentage usually means more cacao solids, which naturally contain cocoa polyphenols, compounds that have antioxidant properties, as well as minerals such as magnesium and iron. Higher-cacao chocolate also tends to contain less sugar.
Not all dark chocolate tastes the same.
Just like coffee or w**e, the flavour of cacao can vary depending on its variety, origin and how the beans are fermented and roasted — with notes ranging from fruity and floral to nutty, earthy or intensely bitter.
