Chorizos La Abuela Borbolla Foods specializing in making La Abuela chorizo/sausage started in a little Edmonton eatery called Mexico Lindo.

The restaurant which had a large kitchen was located in a small strip mall. It was the dream of Gerardo Borbolla Alegria and Ivonne Garces De Isla. In the beginning they started the restaurant because Ivonne Garces De Isla loved to cook. Garces De Isla tells a story of a time when she was young watching her mother cook and the joy her mother had while cooking. The interesting thing about this stor

y is that her mom was more interested in cooking than teaching and anyone who knows Garces De Isla can see her passion for food and cooking. As luck would have it they went to visit a friend in Edmonton and we fell in love with the city and soon after moved to start family. The idea for Mexico Lindo restaurant came from giving people the opportunity to take home authentic Mexican cuisine. They started small and simple creating Mexican dishes like burritos and flautas to sell at the farmers market. They out grew their kitchen in a 10 month period and they knew this was the start of something. The folks were coming in to eat and asking for special orders they could take home as Garces De Isla was more than happy fulfill the customer’s request. The dishes being were preparing is what you would find in any home in Mexico – Authentic Mexican food not Tex-Mex. This is where their idea for La Abuela name came from to sell at grocery stores. They set out on a path of selecting food products that can be prepared for breakfast, lunch and dinner and decided on chorizo/sausage because of its versatility. What separates La Abuela’s chorizo/sausage from other brands is the type of ingredients used – every chorizo is alive with color, aroma, flavor and the pork is from Alberta, Canada where the land is pristine and unspoiled. One of the ingredients used is a type of pepper which gives the chorizo the beautiful terra cotta color. What you will find at La Abuela are three types of chorizos: Mexican Chorizo which is used in creating the perfect breakfast burritos or taquitos. Spanish Chorizo is often referred to as embutidos, for their variety. Some contain lean meat to be served with tapas or with more fat to flavor stews and grilled dishes. Finally, the Spanish Chistorra is a classic sausage from Navarra, Spain, a stunning area that borders with France, the Basque country and Aragon – a must for paellas or stews. All of the Chorizos are prepared with the freshest and finest ingredients. Remember the easiest things are often the best.
