They are a “hidden gem” in the baking world that pair exceptionally well with chocolate and coffee flavours. Soaking in Barcelo Dominican Rum, this extract will be ready in 2026.

Classic Vanilla Custard & Blackberry Pie

Pastry: Your favourite single pie crust 🥧

Blackberry Mixture: 🌿✨
3-4 c. blackberries
1/2 c vanilla sugar
2 tbsp cornstarch with 1-2 tbsp water
1 tbsp vanilla extract
Simmer berries with sugar until they begin to thicken, add cornstarch slurry stir for 3-4 minutes, take off heat & add vanilla. Cool on counter.

Vanilla Custard: 🥚🥛
55g vanilla sugar
25g corn starch
4 egg yolks
375 g whole milk
8 g vanilla paste
Scrape 1/2 vanilla bean
62 g cold, cubed butter
Combine dry ingredients, then add egg yolks and vanilla.
Heat the milk- combine 1/4 c of hot milk to egg mixture- stir. Continue to add rest of hot milk in 3 parts while stirring. Cook & stir custard until thickened.. Take off heat, add butter slowly in 4 batches. Run custard through sieve and add to baked pie shell, top with cooled blackberry mixture.

Place in fridge for at least 4 hours to set. Slice and top each piece with vanilla whipped cream. 🤩 💜🥧
