Activating is the process of soaking nuts, seeds, and grains in water to initiate germination, followed by low-temperature dehydration. This can help to enhance nutrient availability and digestibility, creating a crunchy and nutritious food. Organic, untreated nuts are recommended for activation.
Benefits of Activating:
Seeds contain natural chemicals that protect them, but these can hinder nutrient absorption and digestion.
Soaking reduces enzyme inhibitors, phytic acid, and tannins, making nutrients more accessible.
Activated nuts provide plant-based protein, fiber, antioxidants, and minerals like calcium, zinc, and magnesium.
Roasted Nuts:
For nutritional value, activate and dry nuts before roasting. Prepare large batches and store in airtight containers.
Activating Oats:
Soaking oats improves their digestibility and nutritional value, as seen in dishes like Swiss Bircher Muesli.
How to Activate:
Soak 2 cups of nuts in filtered water with a pinch of salt for 7–12 hours.
Drain, rinse, and dry in a dehydrator (12–24 hours) or at the lowest oven setting.
Store soaked nuts in the refrigerator for a few days.
