Creamy Seafood Pasta Salad 🦐
Tender shrimp, sweet crab, and perfectly cooked rotini pasta are tossed in a creamy lemon herb dressing with crisp vegetables for a refreshing seafood pasta salad. This chilled dish is bright, flavorful, and perfect for summer gatherings, light lunches, or easy meal prep.
RECIPE:
8 oz rotini pasta
8 oz cooked shrimp, peeled, deveined, and chopped
6 oz imitation crab meat, chopped
1/2 cup celery, finely diced
1/2 cup cucumber, diced
1/3 cup red bell pepper, diced
1/4 cup red onion, finely diced
1/3 cup mayonnaise
1/4 cup plain Greek yogurt
1 tbsp fresh lemon juice
1 tsp lemon zest
1 tsp Dijon mustard
1/2 tsp garlic powder
1/2 tsp paprika
1/4 tsp black pepper
1/2 tsp salt
2 tbsp fresh parsley, chopped
1 tbsp olive oil
STEP 1:
Bring a large pot of salted water to a boil. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process, then set aside to cool completely.
STEP 2:
While the pasta cools, prepare the seafood by chopping the cooked shrimp and crab meat into bite-sized pieces.
STEP 3:
In a large mixing bowl, combine the mayonnaise, Greek yogurt, lemon juice, lemon zest, Dijon mustard, garlic powder, paprika, salt, and black pepper. Whisk until smooth and creamy.
STEP 4:
Add the cooled rotini pasta, shrimp, crab meat, celery, cucumber, red bell pepper, and red onion to the bowl with the dressing.
STEP 5:
Drizzle with olive oil and gently toss everything together until the pasta and seafood are evenly coated with the creamy dressing.
STEP 6:
Fold in the chopped parsley and mix lightly to distribute the fresh herbs.
STEP 7:
Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to blend and the salad to chill.

Before serving, give the salad a gentle toss and adjust seasoning if needed. Serve cold for the best flavor and texture.
