TIP OF THE DAY (NOT RECIPE OF THE DAY)!!

The window between perfect scallop and rubbery disc is approximately 30 seconds on a hot pan. 🍥🔥

Wet-packed scallops are the most common reason home cooks cannot get a crust on scallops.

Wet-packed scallops are soaked in a sodium phosphate solution. This solution adds water weight and prevents the Maillard reaction. No amount of patting dry removes the moisture embedded in the tissue.

Always buy dry-packed scallops. The label will say dry-packed explicitly.

Dry-packed scallop on ripping hot cast iron with no oil. 90 seconds per side. Do not move them. Do not touch them.
Add butter only in the final 30 seconds. Butter added at the start burns long before the crust develops.

Pull at 125°F internal. The centre should be just opaque and yield easily to a fork.

Save this and only ever buy dry-packed scallops.

RECIPE:
1 lb large shrimp, peeled and deveined
1 lb sea scallops, side muscle removed
3 tbsp olive oil
3 tbsp unsalted butter, melted
4 cloves garlic, minced
2 tbsp lemon juice
1 tsp lemon zest
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp Italian seasoning
2 tbsp fresh parsley, chopped
Wooden or metal skewers

Method:

Step 1:
If using wooden skewers, soak them in water for 20 minutes to prevent burning. Pat shrimp and scallops dry for better grilling.
Step 2:
In a bowl, mix olive oil, melted butter, garlic, lemon juice, lemon zest, salt, pepper, paprika, and Italian seasoning.
Step 3:
Thread shrimp and scallops onto skewers, alternating pieces. Brush generously with the marinade.
Step 4:
Preheat grill or grill pan to medium-high heat. Place skewers on the grill.
