Recipe: Bison Stroganoff

Ingredients:
1 lb bison steak (sirloin or tenderloin, thinly sliced)

2 cloves garlic, minced
1 tablespoon all-purpose flour
1 cup beef broth
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1 cup sour cream
Salt and pepper to taste
Fresh parsley for garnish
Cooked egg noodles or rice for serving
Instructions:
Prepare the Ingredients:
Slice the bison steak thinly against the grain and season with salt and pepper.
Sauté the Onions and Mushrooms:
In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
Add the sliced mushrooms and cook until they’re browned and tender, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
Cook the Bison:
Push the mushroom mixture to the side of the skillet and add the sliced bison meat. Cook for 2-3 minutes until browned, stirring occasionally.
Make the Sauce:
Sprinkle the flour over the meat and vegetables, stirring to combine. Gradually pour in the beef broth, stirring continuously to prevent lumps.
Add the Worcestershire sauce and Dijon mustard, bringing the mixture to a simmer. Cook for about 5 minutes until the sauce thickens slightly.
Finish with Sour Cream:
Remove the skillet from the heat and stir in the sour cream until well combined. Adjust seasoning with salt and pepper to taste.
Serve:
Serve the Bison Stroganoff over cooked egg noodles or rice. Garnish with fresh parsley for a pop of color and flavor.
