❓ Question of the Week: When should I plant my garlic? 🧄
It depends on your zone — and watching your local weather is key!

❄️ For northern growers (like us in Zone 3!)
Plant about 6 weeks before the ground freezes. Here in Okotoks, Alberta that usually means after Thanksgiving — mid-October.

🌱 Final tip
Weather varies year to year, so watch the forecast as planting time nears!

Plant at the right time and you will set yourself up for a great harvest 💚

Throw It Together Thursday – Recipe #11

This week we’re making Garlic & Herb Roasted Carrots — one of those simple side dishes that proves you really don’t need a lot of ingredients to make vegetables taste amazing.

Fresh garlic, olive oil and a handful of herbs completely transform roasted carrots. Toss everything together, spread it on a baking sheet and roast until the carrots are tender and starting to caramelize around the edges.

And don’t stop at carrots! You can use this same basic recipe with so many vegetables. Try potatoes, sweet potatoes, parsnips, cauliflower, broccoli, Brussels sprouts, zucchini or a mixture of whatever you have in the fridge.

That’s really what Throw It Together Thursday is about — simple recipes, real ingredients and ideas you can change to suit what you already have at home.

Save this one for an easy weeknight side dish!

Garlic planting season is almost here in Okotoks! 🧄 Here is how we give our garlic the best start 👇

1️⃣ Separate the cloves — break bulbs apart close to planting time to keep cloves fresh.

2️⃣ Fertilize the soil — garlic loves nutrient-rich soil. Work in a good organic fertilizer before planting.

3️⃣ Soak overnight — soak cloves in fertilizer solution the night before to boost root growth.

4️⃣ Plant root-side down — 6 inches apart, rows 9–12 inches apart.

5️⃣ Cover & mulch — 1 inch of soil, then 3–6 inches of mulch to insulate through our Alberta winter.

Strong start now = healthy harvest next season! ✨

🧄 Ever wondered what happens after you plant garlic? Here is the whole year in one picture.

Fall: plant cloves point-up and cover with mulch (we plant after Thanksgiving here in Zone 3).
Winter: they sleep under the mulch.
Spring: green shoots push through.
June: scapes curl — cut them so the energy goes into the bulb.
Summer: leaves yellow, bulbs swell.
Late summer: dig, cure, braid, store. Then do it all again. 🧄

Throw It Together Recipe Thursday! 🧄

This week we’re keeping it simple with Spaghetti with Garlic & Olive Oil — proof that you really don’t need a long ingredient list to make a great meal.

Fresh garlic slowly cooked in olive oil, a little red pepper if you like some heat, parsley, Parmesan and pasta. That’s it! Simple, inexpensive, and perfect for those nights when you’re staring into the pantry wondering what to make.

And around here, 6–8 cloves is really just a suggestion. 😉

Serve it on its own, add grilled chicken or shrimp, or pair it with a salad and some homemade garlic bread.

Save this recipe for a busy weeknight — chances are you already have almost everything you need!

Would you stick with 6 cloves… or are you measuring garlic with your heart? 🧄

Throw It Together Recipe Thursday!

Is there anything better than warm, homemade Garlic Bread straight from the oven?

This week's recipe takes a simple baguette and turns it into crispy, buttery, garlicky goodness with fresh garlic, butter, parsley and a little Parmesan.

It's one of those easy recipes that goes with almost everything — pasta, soup, Caesar salad, steak, BBQ... or just eat it straight off the pan. Around here, garlic is definitely measured with your heart.

Garlic lover tip: Make the garlic butter ahead and keep it in the fridge. Then whenever you have a baguette or loaf of bread, homemade garlic bread is only minutes away.

Save this one for your next pasta night!

What's your vote — soft and buttery or extra crispy garlic bread?

Throw It Together Recipe Thursday!

Have garlic that's starting to get a little past its prime? Don't throw it away!

One of my favourite ways to make the most of our garlic harvest is turning it into homemade garlic powder. Simply slice it, dehydrate it until completely dry, then run it through a food processor or blender.

It's a great way to use garlic before it goes to waste AND preserve that garlic flavour to use all year long.

Use it in soups, sauces, salad dressings, marinades, meat rubs, roasted vegetables, garlic butter, garlic bread... pretty much anywhere you want a little extra garlic.

Don't feel like making your own? Connect Farms also sells garlic powder! If you'd like to order some, please reach out and we'll get you set up.

And remember — the slightly imperfect or aging garlic doesn't always need to hit the compost. Sometimes it just needs a new purpose.

What's your favourite way to preserve extra garlic?
