Hailing from the Basque region of southwestern France, Ossau-Iraty is one of the rare cheeses made exclusively from sheep’s milk—and it proudly carries a PDO designation (which means it’s the real deal, made using traditional methods in a specific region).

What to expect? A firm yet creamy texture, with flavours that evolve from buttery and nutty to slightly sweet and grassy, depending on its age. It’s the kind of cheese that keeps you coming back for “just one more slice”… repeatedly.
