Our neighbors rooster has been popping by lately for visits. We have two dogs and two cats. Nobody seems to mind him, so he seems to be becoming a regular guest.

I had some lovely left over pot roast and gravy. So naturally I think, Shepherds Pie. This baby did not disappoint! I had a big bunch of nice fresh spinach and decided to use that as the veggie part of the pie. I just cooked it down with a little salt and pepper. Topped with potatoes mashed with whipping cream and butter and a little green onion.
Ok, it wasn't Keto but it was worth it!!!

We had a bit of beef leftover from that lovely roast the other night. Last night I repurposed it.
I sautéed mushrooms, onion and garlic then hit it with a shot of vermouth. Next a bit cream, parmesan and fresh rosemary. I added in the thinly sliced roast beef, salt and pepper and cooked it down a little. The result was this beautiful, creamy sauce. I served it over my homemade fettuccine. Yummy!! 😋

I'm excited to try this cross rib roast! I brushed it with balsamic vinegar and rubbed it with lots of fresh garlic, rosemary, thyme, salt and pepper.
The pan looks like it might be a bit of a challenge but I think it'll be worth it!
