Have you tried Truffle Manchego yet? A luxurious sheep’s milk cheese from Spain infused with real black truffle paste. It’s creamy, has a slight tangy sharpness, and a deeply savory aftertaste of garlic and earthiness.

How to use this cheese?

🧀 Make a gourmet mac n cheese! Shred this alongside a sharp cheddar in your sauce for the ultimate upgrade!

🧀 It’s pizza-oven season! Shave this cheese over your next white-sauce pizza with mushrooms and arugula.. *Chefs kiss*

🧀 Add it to your next cheeseboard! Set it out 30-45 minutes before serving. Let it come to room temp for the full truffle flavour to release.

🍷Pair this cheese with a Spanish wine! Try an aged Rioja which will have notes of oak, leather and vanilla to match the earthy truffle aroma and flavour. Or try a sparkling, crisp Cava where the bubbles will cleanse your palate after a rich, creamy bite!

Introducing Pippa 🧀 - inspired by the classic crottin style cheeses found in the south of France, this cheese is made from fresh chevre at Rivers Edge Goat Dairy in Arthur, Ontario.

This cheese is hand rolled and aged until a soft white mold rind grows on the outside. It’s a soft cheese with a chalky, fudgy firmness to it. Pippa has woodsy and mushroomy notes with a stronger, sharp goaty flavour.

How to enjoy this cheese:

🧀 Try the “Chèvre Chaud” Method, the most famous way to eat Crottin style cheese - warm up the whole round in the oven and serve with toasted bread, or, slice the round onto baguette slices and bake in the oven. Serve these warm goat cheese toasts with a mixed green salad!

🧀 Make a pasta sauce with it! Start by sauteing your aromatics and veggies in some olive oil, crumble in some Pippa along with a splash of starchy pasta water, stir until the cheese breaks down and comes together into a rich, creamy sauce!

🧀 Keep it simple and add to your cheese board as-is! Let it sit out to room temperature and serve with nuts, sliced fruit and a drizzle of honey.

Best wine to pair with it?
A crisp, high acid wine to cut through the tanginess of the goat cheese - try Sauvignon Blanc or unoaked Chardonnay!

Made with tangy goat cheese, creamy Greek yogurt, spinach, garlic and a secret blend of spices, this is a dip that you cannot stop eating once you start! We love to scoop it with Pita chips or spread it on some fresh .and.salt sourdough bread. The way milk is treated before cheesemaking changes everything. Raw milk cheeses keep their natural enzymes and microflora for deeper and more complex flavours, while thermalized (or thermized) and pasteurized cheeses offer more consistency and in some cases a longer shelf life.
Great cheese is a reflection of its milk. Whether it’s raw, thermalized or pasteurized, there is no “better” method, just different approaches with different results!
Come taste the difference. We always have a selection of raw milk cheeses in the shop!
