m Tuesday through Friday 8-3pm I carry my basic tamale menu : rotating tamales will always include 2 mild tamale options (chicken or beef/pork and Vegan black bean and 1 spicy variety of meat). In addition we make corn tortillas for tacos and I carry crunchy tostadas too. Saturdays in addition to my meat and vegan tamales I will also have
Chicken Tortilla Soup (Oct-May), Chicken Enchiladas in green sauce, and as we approach fresh corn season Mexican Corn Salad (from June-mid Sept). We also carry an extensive line of Jarritos Mexican Drinks, Gluten-Free Corn Flour, Corn Husks, & Masa Spreaders and Valentina Hot Sauce. The tamale has been around since 5000 BC and is a favorite food from Mexico and South America. Thankfully this Hispanic secret is now shared with the world. Tamales are a food enjoyed by people of all cultures and for all seasons. For those unfamiliar with tamales: imagine the size of a small spring roll, now take a corn husk {no worries, you don't eat the husk}; spread it with masa {corn flour} and various fillings and then steam it to perfection! Unwrap your pretty tamale from the husk and enjoy with salsa, a slice of avocado or alone with a little sea salt. My tamales are naturally gluten free, lactose free, dairy free and I use no leavening agents {like eggs, baking powder or baking soda}. I use 100% vegetable shortening. Tamales are also eco-friendly, feel free to compost your empty husk once you have savored your tamale. Tamales are sold frozen and can be stored for up to 4 months in the freezer. Cooking direction:
In microwave : wrap tamale in paper towel or wax paper and set on med-high for 1 1/2 mins (microwave times may vary). On stove top: use a vegetable steam basket and steam your tamales from frozen for about 30 minutes. On the bbq: thaw tamales completely and cover in foil paper with teaspoon of water. Turn twice for 10 minutes on 350 degrees. Being from Texas I learned to make tamales as part of family tradition. I absolutely enjoy sharing this delicious and unique food with everyone I meet. Nothing says handmade goodness like tamales!
