Ever wonder why you sometimes see a brownish steak on display? That’s the science of meat… specifically oxidization!

When meat is first being processed it turns this bright red colour, we call that ‘Blooming’. This happens because of the myoglobin (a protein in meat that gives its natural purple/red colour) is exposed to oxygen, changing into oxymyoglobin.

When the meat then has low oxygen access, like when it’s inside the vacuum-sealed package or even the inner part of a roll of ground beef, the myoglobin turns into metmyglobin. This change produces a greyish or brown colour.

But don’t worry, it’s usually still safe to eat. Be sure to do a sniff test first to make sure everything smells okay. Like we say in the butcher’s world, the nose knows!
