21g of protein packed into crispy, golden falafel. These little power balls are your post-workout secret weapon, combining protein from chickpeas with flavor from herbs and spices. Meal-prep friendly and perfect for wraps or dips, they satisfy cravings without sacrificing your nutrition goals.

Here's how it comes together:
- 1 cup chickpeas (soaked overnight)
- 1 small onion
- 2 cloves garlic
- 1/4 cup fresh parsley
- 1 tsp cumin
- 1 tsp coriander
- Salt and pepper to taste
- 2-4 tbsp flour
- Oil for frying

1. Drain and rinse the soaked chickpeas.
2. In a food processor, blend chickpeas, onion, garlic, parsley, cumin, coriander, salt, and pepper until coarse.
3. Gradually add flour until the mixture holds together.
4. Form into small balls or patties.
5. Heat oil in a deep skillet over medium heat.
6. Fry falafel for 4-5 minutes per side until golden.
7. Drain on paper towels and serve warm.

Don’t skimp on the herbs; they’re what make it pop.

Decided to make meatloaf on thus cool & wet day. Glazed it with CHERRY RHUBARB JAM & boy was it tasty!
