Celebrate the Civic long weekend with this Citrus Shrimp & Avocado Salad with Grapefruit! 🍤🥗
Perfect for a family meal—ready in just 25 minutes!
👩🍳 Recipe (Serves 4):
🕒 Prep Time: 25 min
Ingredients:
• 340 g Ocean Jewel Cooked Tail-On White Shrimp, thawed
(about 24 shrimp / 6 shrimp per serving)
• 10 ml freshly squeezed lemon juice
• 20 ml olive oil
• 4 ml lemon pepper seasoning
• 140 g avocado, diced
• 140 g ruby red grapefruit segments
• 80 g cucumber, sliced and quartered
• 20 g sprouted greens
• 140 g (about 2 L) mixed greens
• 120 ml honey Dijon salad dressing
Directions:
1️⃣ Thaw shrimp overnight in the refrigerator.
2️⃣ Marinate the shrimp with lemon juice, olive oil and lemon pepper seasoning. Refrigerate for at least 1 hour.
3️⃣ Prepare the remaining ingredients: diced avocado, segmented grapefruit, sliced cucumber, and greens.
4️⃣ Assemble the salad by dividing mixed greens among 4 plates. Top each with avocado, grapefruit, cucumber and 6 shrimp. Finish with sprouted greens and serve dressing on the side.
