I started smoking blocks of cheese for my own use and the word quickly spread to my friends who wanted to try it. They then told their friends, who told their friends, and my business was born from word of mouth. I offer a very unique product that isn’t available anywhere else. I smoke it all over apple wood, although I have tried a few others, but kept coming back to apple. I just do this more or
less as a hobby but at times it keeps me busy. It makes great gifts for those hard to buy for people, and I also have gift certificates in any value you choose to purchase. After three years of smoking my cheese, this page was created after pressure from friends to get my product out there to the public. Just add crackers and/or pepperoni, or whatever you like. The smoked cheddar goes great with apples. Take it to your BBQ to put on your burger or hot dog. Put the smoked mozzarella on home made pizza. Any of them go great in a grilled cheese sandwich or in an omelet. Awesome in home made mac and cheese. The smoked parmigiano-reggiano or asiago pair up well with any pasta dish. Use it in any recipe that has cheese in it to totally transform the flavour. It also pairs well with wine. ;)
I offer it in regular smoked or lightly smoked for those that find the regular too strong. I will also do any cheese that isn't on my list if requested, as long as I can find it. It comes vacuumed sealed and will keep for many weeks at room temp and will keep for years in a fridge. Once it is opened, it is like any other cheese, it has a "best before" date. Pickup is at my door or I will set up a meeting spot in Antigonish. If you are passing Pomquet on the highway, I can meet you there. I will deliver to Pictou County when I make my weekly trip for other reasons and set up a meeting spot there. I will drop it off in Truro, Halifax, or Moncton if I happen to be going there anyway, but due to covid, I haven't been going often. I will put it on Maritime Bus for same day delivery anywhere the bus goes at your cost. I will ship anywhere in the world through Canada Post at your cost. I have shipped it from coast to coast in Canada with no issues. I do not charge extra for handling, just what ever the bus or post office charges. Payment is expected with cash or e-transfer.
