Scum still doing scum things.

The Elvy’s Meats saga is unfortunately continuing. To reiterate, the ONLY Elvy’s has moved to Concord with David and John. The quality, passion, team and love for the craft goes with them.

My ex-landlord is holding a family name (and Company name) hostage, resulting in the legacy of two honest, hardworking men disappear. This is, once again a disgusting act by my ex-landlord and property manager who are simply bitter for truth being told and their golden goose moving on.

Help John and myself keep Elvy’s special, keep 74 years of history stay with the people who did the hard work, made the sacrifices, endured every hard time- not a landlord with a grudge who owns a building.

Most people don’t realise just how far beef quality has fallen — because they’ve never been shown the difference.

Real mince comes from fresh, whole animals that are grass-fed and grass-finished. It has structure, a clean flavour, and cooks the way beef is meant to — not watery, not pasty, and not shrinking into nothing in the pan.

A lot of what’s sold today as “fresh mince” isn’t that at all. It’s carton meat — pre-packed, often from multiple sources, ground without any real connection to the animal or the farm. By the time it hits the grinder, traceability is gone, and consistency is hit or miss.

This isn’t about convenience vs quality — it’s about understanding what you’re actually buying.

When beef is raised properly, handled properly, and minced fresh, the difference isn’t subtle. It’s obvious.

Know your source. Ask the question. Expect better.

Today marks 1 month since we moved our butcher shop from Leichhardt to Concord ❤️

We just want to say a huge THANK YOU to everyone who has supported us - our loyal customers who followed us to our new location, and all the new faces we’ve had the pleasure of meeting this past month.

As a small family business, your support truly means everything to us. Every visit, every purchase, every kind word makes a difference.

There is only ONE Elvy’s- it’s now at Concord.

We are NOT reopening at the old Leichhardt address.

Elvy’s is what it is by David’s hard work, passion and business acumen, combined with John Elvy’s family legacy. Not a street address.

A landlord is using John’s family name, history and legacy without permission to draw potential customers to his property.

David and John do not condone this and are so disappointed in the unprofessionalism by the previous landlord and their managing agent.

The REAL Elvy’s is at Concord- not determined by a reserved ASIC Company Name and writing on a building.

Please note that this is not a ploy to jeopardise someone’s new business, but an awareness post highlighting how two people’s hard work and legacy are being offered up for lease.

The man himself, if you've ever been to Elvy's, you've met Dave.

This guy knows his way around a knife cuts no corners when it comes to good quality meat.

He's here at 2am everyday and always the last to leave, he knows all the local's by name and can't take two steps out the door without someone flagging him down.

A certified local legend, Dave's love for what he does translates directly into the local love for Elvy's.

Everyone loves a Sunday roast, but not everyone loves the dishes that come with it - and don't even get us started on the prep work!

We've taken the hassle out of hearty roasts - starting with our rolled lamb roast. Ready to go straight in the oven with your favourite veg which can be purchased in store on Friday & Saturday. All it needs is rich gravy and Sunday's sorted!

At just 17 years old he's hellbent on learning as much as he can (and lucky for him, he's learning from the best).

If you need him, he's usually out the back making the sausages, beef patties, sausage rolls and all of the other house-made goods our locals love so much. A good kid with a heart of gold.
