Even confident home cooks can feel a bit wary of octopus. The shape and the texture can throw you if you’re not sure how to handle it, but we promise it looks and tastes beautiful. Octopus comes in many sizes and is tenderised in different ways, so if in doubt, ask your fishmonger how they’d prepare it.

I aged this tuna tail for 3 months. Back in June we were lucky enough to get a tour of the new Sydney Fish Market with Low Tide Mike. On the tour we managed to get our hands on this giant chunk of southern bluefin tail from Claudio’s Seafood. Following the kingfish tail ham I did a little while ago I had this idea for a prosciutto type setup. So lucky to get a hold of this fish right at the peak of the season you can see in a couple of the slides just how fatty they are that time of year. Tonnes of intramuscular fat and under the skin is even crazier. Once I had that skin off I had a few people saying it almost looked like a leg of lamb. Fair bit of experimenting with it but essentially it was an equilibrium cure around 2-3% salt to weight then mixed in about 0.25% Cure #2 to make it food safe. That ran for about 14 days. Initially I had it sitting in a bucket for this but in future I’ll just lay it in a tray so it has more contact with the brine that comes out. Even better might be a vacc bag to be honest. After that it was cold smoked with the Smokai unit. Absolute gun that thing so easy to use and makes cold smoking super easy. I contemplated trussing the tail at this point if nothing else just for the aesthetic but honestly it didn’t really need it. It had so much structure and all that fat on the outside seemed to form a protective coating. The main concern for the age is case hardening. If the fridge is too dry you end up with this barky exterior that doesn’t allow any moisture to make its way out. You can use these wraps and bags to stop that but my fridge manages to stay pretty humid so I was happy to experiment with that. In terms of meat weight it was pretty hard to judge because there is actually a tonne of bone In this cut but I was going to go for about 20-25% moisture loss for the cure. Even after 3 months it hadn’t quite got there and Id probably put that down to the humidity being too high in the fridge. I was pretty keen to get it out of the fridge though so that’s where I pulled it. In the end not quite the prosciutto texture I was going for, a little more like smoked salmon but with abit more of a hammy flavour.
