A comforting bowl of homemade roasted carrot and lentil soup! Made with fresh, home grown vegetables, this healthy soup is the perfect way to nourish your body and support a healthy lifestyle.
"Satisfy your cravings for something warm and comforting, this healthy soup is perfect for those following a healthy lifestyle.

Ingredients:

1 lb. organic carrots, peeled and chopped
1 cup lentils, rinsed and drained
1 onion, diced
1 cup coconut milk
2 cloves of garlic, minced
4 cups organic vegetable broth
1 tsp. cumin powder
Salt and pink pepper to taste
Fresh chopped parsley and chives for garnish
Instructions:

Preheat your oven to 400°F. Toss the chopped carrots in a little bit of olive oil, salt and pink pepper. Roast in the oven for 20-25 minutes, until they are tender and slightly caramelized.
In a pot, sauté the onion and garlic in a little bit of olive oil until softened.
Add the lentils, cumin powder, and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the lentils are tender.
Once the carrots are done roasting, add them to the pot and let it simmer for another 5 minutes. blend until smooth add coconut milk.
Season with salt and pepper to taste.
Ladle the soup into bowls and garnish with fresh parsley and chives. Enjoy!

Today, I wanted to share a recipe with you all that's been a staple in my morning routine lately: Healthy Berrylicious Chia Seed Smoothies!

I've been trying to incorporate more fruits and veggies into my diet, and this smoothie is a delicious and easy way to do just that. Chia seeds are loaded with fiber, protein, and omega-3s, making this smoothie a powerhouse of nutrition.

Here's what you'll need to make this delicious breakfast smoothie:

1 cup frozen mixed berries of your choice
1/2 banana
1 tbsp chia seeds
1/2 cup almond milk (or milk of your choice)
1/2 cup plain Greek yogurt.
1 tsp honey agar or date syrup (optional)
