Wellington Apiary began in 2009 in an established garden in the center of Hobart, Tasmania. We produce raw, coarse filtered, unheated pure honey-just the way the bees made it. Wellington Apiary began on the principles of producing honey that reflects the flora of Hobart and surrounding vegetation. The philosophy has continued with all variations of our honey production. Wellington Apiary honey is
not heated at any stage of extraction, bottling or production-ensuring all the natural goodness and medicinal values remain. Wellington Apiary bees are housed in wooden wax dipped hives, meaning the bees are kept in optimum health, free from chemicals or paints. We ensure our bees are allowed ample stores of their honey over winter on which to feed, so they enter into spring; strong, healthy and able to continue producing pure Tasmanian honey. Beekeepers Nick and Robin currently produce three honey varieties:
HOBART WILDFLOWER: Unlike other honey flavours, this is an early yielding honey, collected by the bees during spring. This honey is dark, thick and glossy in appearance, with delicate floral flavours and slight citrus aromas. Hobart Wildflower is set with a fine crystal and remains semi-sofy once bottled. LEATHERWOOD: This honey has a unique flavour, incomparable to any other, filling the mouth with earthy and spicy flavours. It is set with a fine crystal and remains semi-soft once bottled. Leatherwood honey is so distinctive that it has been included in the International Ark of Taste (an international society that recognise rare, endangered and culturally significant foods). PRICKLY BOX: Our bees have only four weeks to collect this precious nectar. Prickly Box honey is bright yellow and flows freely from the combs. The overwhelming flavour and aroma of this honey is of almonds, and is only semi-sweet. Once bottled, this honey sets firm with a fine crystal.
