We’re at the Gluten Free Expo this weekend – come say hello! 🎉

Ten years ago, I was working as a Project Manager in clinical research at a hospital. I saw firsthand how few flavourful food options were available to those with dietary restrictions — especially when it came to gut health and longevity.

That experience inspired me to re-create a food that’s: ✔️ Naturally gluten-free

After a year of deep research, I fell in love with the art of traditional Japanese-style miso paste. I sourced the best certified organic, biodynamic, and locally produced ingredients, and fermented everything the natural way — with no additives.

Now, after a decade of making miso at a commercial scale, I’m proud to share this beautiful food with the public.

Miso soup for every meal any day.

Whenever a bowl of steamed rice is served, you can expect that miso soup will be served as well (not prior to mealtime like a Western course meal). And here’s the important part: miso soup in Japan is not just tofu, wakame seaweed, and green onion. Every day the ingredients vary!

For a super easy (and delicious 😉) Seaweed Salad I use dried seaweed salad mix purchased at my local Japanese grocery store. A well-stocked Asian grocery store should carry them as well.

The seaweed mixture is very easy to use, you just need to soak them in cold water for a few minutes to soften and then drain well before tossing with dressing. There are many kinds of dressing that would go well with the salad, however I enjoy this Miso Dressing which is packed with umami!

Stir Fry Miso Eggplant is a fast (20 minutes!), vegan friendly dish that's perfect as a side dish or a main and is so simple to make!

Tip: if you can’t find Japanese/Chinese long eggplant, you can use a globe (American) eggplant, but the key is to keep the skin attached so that eggplant doesn’t lose its shape during stir-frying. The globe eggplant has a glossy and thicker skin than Japanese/Chinese eggplant but it should still work.

How hearty and tasty!

While most udon noodle soups are served in clear dashi broth seasoned with soy sauce, in the Nagoya region, where Hatcho miso is known for, you can find delicious udon noodle soup flavored with miso, called the Miso Nikomi Udon (味噌煮込みうどん). It’s deeply savory and topped with an assortment of ingredients.

Hungry? Let’s reach for the tub of miso and whatever ingredients you have in the refrigerator and make this tonight!
