Meet your new family favourite: Eggplant & Italian Sausage Lasagne Roll-ups. 🥘 This modern take on a classic is packed with flavour and super easy to serve. It’s the perfect way to sneak some extra veg into dinner! Who’s trying this tonight? 🙋♂️
Ingredients:
3 large eggplants, sliced
1 tbs La Gina extra virgin olive oil
900g Woolworths Italian Fennel Sausages
400g La Gina Bolognese sauce
1.5 cups shredded mozzarella
Fresh parsley to serve
Method:
1️⃣ Preheat oven to 220°C (200°C fan-forced).
2️⃣ Place eggplant on a lined tray, drizzle with oil, season and bake for 20 mins until soft. Let cool.
3️⃣ Divide sausage meat (removed from skins) among slices and roll up to enclose.
4️⃣ Spread 2/3 of the sauce in a baking dish. Place rolls in, cross-section up.
5️⃣ Top with remaining sauce and cheese. Bake covered with foil for 30 mins.
6️⃣ Uncover and bake for 20 mins until golden. Sprinkle with parsley. 😋
