Meet your new family favourite: Eggplant & Italian Sausage Lasagne Roll-ups. 🥘 This modern take on a classic is packed with flavour and super easy to serve. It’s the perfect way to sneak some extra veg into dinner! Who’s trying this tonight? 🙋‍♂️

Ingredients:
3 large eggplants, sliced
1 tbs La Gina extra virgin olive oil
900g Woolworths Italian Fennel Sausages
400g La Gina Bolognese sauce
1.5 cups shredded mozzarella
Fresh parsley to serve

Method:
1️⃣ Preheat oven to 220°C (200°C fan-forced).
2️⃣ Place eggplant on a lined tray, drizzle with oil, season and bake for 20 mins until soft. Let cool.
3️⃣ Divide sausage meat (removed from skins) among slices and roll up to enclose.
4️⃣ Spread 2/3 of the sauce in a baking dish. Place rolls in, cross-section up.
5️⃣ Top with remaining sauce and cheese. Bake covered with foil for 30 mins.
6️⃣ Uncover and bake for 20 mins until golden. Sprinkle with parsley. 😋

Move over traditional dumplings, Smashed Gyoza are here! 🥟 We’ve turned the viral trend into an easy 20-minute meal using fresh Woolworths pork mince. Perfect for a quick family dinner or a cheeky snack! 🥢
Smashed Pork Gyoza
PREP: 10 mins COOK: 10 mins SERVES: 4 (makes 16)

Ingredients:
350g Woolworths lean pork mince
¼ bunch spring onions, sliced
2 garlic cloves, minced
3cm piece ginger, minced
⅓ cup soy sauce
½ bunch coriander, chopped
32 gyoza wrappers
¼ cup vegetable oil
1 tbs chilli oil, to serve

Method:

1. Mix pork, white spring onion, garlic, ginger, 1 tbs soy, and half the coriander.

2. Spread 1 tbs of mix onto 16 wrappers.

3. Heat oil in a pan. Place gyoza in, press down with a spatula to “smash.”

4. Top with a second wrapper. Cook 1-2 mins per side until golden and cooked through.

5. Top with chilli oil, remaining herbs, and serve with extra soy sauce! 🥢🌶️

This bang bang rice is spicy, sassy, and the ultimate weeknight glow-up for your freezer staples. Consider this your sign to finally level up that crispy chilli obsession! Your tastebuds can thank us later. 💅🔥

Crispy chilli bang bang rice ✍️
PREP 10 mins COOK 30 mins SERVES 4

450g pkt Woolworths microwave jasmine rice
¼ cup crispy chilli oil
1 tbs soy sauce
400g pkt Woolworths Southern fried chicken pops
1 Lebanese cucumber, thinly sliced
2 spring onions, chopped
½ cup edamame, shelled
1 tsp toasted sesame seeds
½ small avocado, sliced
¼ bunch coriander, leaves picked
1 tbs sriracha mayonnaise
1 tsp fried shallots

1 Preheat the oven to 220°C/200°C fan-forced. Line a baking tray with baking paper. Spread rice over prepared tray. Drizzle with chilli oil and soy sauce, and stir to coat. Bake, stirring halfway, for 30 minutes or until golden and crispy. Set aside to cool slightly.

2. Meanwhile, cook chicken following packet instructions.

3 Transfer rice to a large bowl. Add chicken, cucumber, onion, edamame and sesame seeds, and toss to combine.

4. Spoon into serving bowls. Top with avocado, coriander, sriracha mayonnaise and fried shallots. Serve.

Hot Cross Bun Dippers
PREP: 10 mins COOK: 5 mins SERVES: 4

Ingredients:
100g dark chocolate, chopped
1/4 cup Woolworths hazelnut spread
1/3 cup thickened cream
4 x 50g hollow chocolate Easter eggs
4 Woolworths traditional fruit hot cross buns
50g unsalted butter, softened

Method:

Microwave chocolate, spread, and cream on high for 1 min (stir halfway) until smooth. Cool for 15 mins.

Place eggs in cups, carefully cut off tops, and spoon in chocolate mixture.

Slice buns into thirds, toast until golden, and butter. Cut into dippers and serve!

TIP: Swap for chocolate hot cross buns for a double chocolate hit! 🍫

If you're looking for the ultimate long-weekend lunch, these Vietnamese-style skewers are a total game-changer.
Paired with a zesty, smashed cucumber salsa, they’re fresh, zingy, and take only minutes to grill. 🥒✨

PREP 10 mins COOK 10mins SERVES 4

Ingredients:
1½ tbs lemongrass paste
3 garlic cloves, minced
2 limes, rind grated, juiced
1 tbs vegetable oil
28 jumbo green king prawns (500g), peeled and deveined, tails intact
extra virgin olive oil cooking spray
3 Lebanese cucumbers
1 long red chilli, sliced
½ bunch of mint, chopped
1 tbs soy sauce
1 tsp sesame oil
1½ tsp toasted sesame seeds
2 x 250g pkts Woolworths microwave Jasmine rice
8 pre-soaked bamboo skewers

METHOD
1. Combine lemongrass paste, 2 garlic cloves, lime juice and rind, and vegetable oil in a large bowl. Add prawns and toss to coat.
2. Preheat a barbecue or chargrill plate on high heat. Thread prawns onto skewers. Spray skewers with oil and add to grill. Cook for 2-3 minutes each side, or until prawns are cooked through. Transfer to a plate and cover loosely with foil to keep warm.
3. Place cucumbers on a board. Using a rolling pin, gently smash cucumbers. Cut cucumbers into chunks and transfer to a small serving bowl. Add remaining garlic, chilli, mint, soy sauce, sesame oil and sesame seeds to bowl and mix to combine.
4. Cook rice according to packet instructions. Serve prawns with rice and smashed cucumber salsa.

🐑 Nothing beats a slow-cooked lamb roast that’s so tender, it practically melts off the bone. We’ve paired this succulent Aussie lamb with the ultimate crispy potatoes – golden on the outside and fluffy in the middle. It’s the set-and-forget dinner you need for a stress-free night, no matter what day of the week it is!

PREP 15 mins COOK 5 hrs 10 mins SERVES 8

Ingredients:
2 garlic cloves, crushed
2 tbs extra virgin olive oil
2.25kg Woolworths Australian lamb leg
1kg baby potatoes, halved
2 cups chicken stock
2 bunches broccolini, trimmed, steamed
1 cup frozen peas, steamed

Method:
1. Preheat oven to 170°C/150°C fan-forced. Combine garlic and oil in a small bowl. Season. Place lamb in a large roasting pan. Rub garlic mixture over lamb. Add potatoes to roasting pan. Pour stock into roasting pan around lamb. Cover with baking paper, then tightly with foil. Bake for 4 hours and 30 minutes or until very tender.
2. Remove lamb from oven. Remove foil and baking paper. Carefully drain stock mixture. Increase oven temperature to 220°C/200°C fan-forced. Cook lamb and potatoes for a further 20 minutes or until lamb is golden. Transfer lamb to a serving dish. Cover to keep warm. Cook potatoes for a further 20 minutes or until golden and crispy. Serve with broccolini and peas
