We were so busy on that we didn't even manage to get any pics! Thankfully a wonderful customer got this one of Scott while he was busy making over 300 Barra tacos for our hungry visitors.

This pan fried Sockeye salmon dish from Chef Brenton is a bowl of beauty.

When Oh! My Oyster sent us some samples to try, Scott set up a proper little taste test with oysters and sashimi and got the whole crew involved.

We put the range through its paces, liked what we tasted, and the next step was pretty obvious - we’re now stocking them at Port Fresh.

Three different flavour directions, all designed to add something without overpowering the seafood.

We tried them. We liked them. Now we stock them.

By late September, spring starts to feel like it's here to stay, and this is exactly the kind of dinner we start craving.

Crispy Australian barramundi with green papaya, rice noodles, fresh herbs, peanuts and a bright nuoc cham dressing. Fresh, crunchy, zesty, and still substantial enough to call dinner.

A lovely way to lean into lighter spring cooking without giving up on flavour.

This flavoursome dinner felt like it took us on holiday... 🇮🇩

Scott whipped up some punchy homemade spice paste, tomato sambal and satay sauce, then loaded the grill up with fresh prawns, chicken and beef skewers. He served them with nasi goreng for a true taste of Bali.

The prawns soaked up all that smoky, spicy flavour beautifully, and the satay sauce tied the everything together.

Quality produce and a little bit of prep delivered plenty of flavour, and exactly the kind of meal worth firing up the grill for.

Spring entertaining doesn't have to be a whole production - the warmer weather calls for keeping it fresh and simple so that you can spend more time with your guests, not in the kitchen!

These prawn finger sandwiches with chives and chilled salmon caviar fit the brief perfectly, delightful little mouthfuls made for a spring lunch, casual get-together, or when the humble sandwich deserves an upgrade.

And the best part - they're ready in around 20 minutes!
