Let’s talk about a simple pantry upgrade that does so much more than just change up your morning coffee routine 🍯✨

SALMON BROTHY RICE BOWL FOR ONE 🍵💥

Recipe by
Ingredients (serves one):

1 small bowl hot cooked rice (short grain rice or sushi rice)
Rice wine vinegar
1-2 tsp liquid dashi soup seasoning mixed with 150-200ml hot water (can swap for miso or green tea)
Soy sauce
1 or 2 tbsp flaked salmon (can also use tinned)
Spring onions
Furikake seasoning
Sesame seeds
Optional wasabi

Method:

Season cooked rice with a dash of rice wine vinegar and gently fluff through. Place rice in a serving bowl and sprinkle over sesame seeds. Top with flaked salmon, sliced spring onions, a generous sprinkle of furikake & optional dabs of wasabi.

Mix hot water with liquid dashi (or miso/green tea), then add a splash of soy sauce to taste. Gently pour the hot broth over the rice & toppings until just submerged.

Raspberry Date Bark 🍫😍 It’s a perfect combo of sweet, salty & crunchy! Recipe by

Ingredients:
for the chia jam:
3/4 cup raspberries (95 g)
1 tablespoon chia seeds

for the bark:
15 dates, pitted
100g 80% dark chocolate
handful of pistachios, chopped
pinch of flaky sea salt

1. Mash the berries
2. Add the chia seeds and stir to combine
3. Let sit for 20 minutes to let the chia seeds soak and mixture to thicken
4. Meanwhile cut open the dates and remove the pits
5. Press them down onto a cutting board lined with parchment paper
6. Spread the raspberry chia jam on top
7. Melt the chocolate in the microwave
8. Pour the chocolate over the jam
9. Sprinkle chopped pistachios and flaky sea salt on top
10. Let set in the fridge for one hour
11. Cut into pieces and enjoy!
12. Store in an air-tight container in the fridge or freezer. It lasts in the fridge for a couple of days but in the freezer for about a month. Freeze pieces in a container with parchment paper between layers

TUNA-LOADED CRACKERS ✨ Perfect for your mid-week lunch!

Recipe by

Ingredients:
95g tin tuna, drained
1 tbsp Greek yogurt
1 tsp Dijon mustard
1 celery stalk, diced
1 tbsp finely chopped red onion
1 pickle, finely diced
1 tbsp chopped chives
3 cruskits (use rice cakes for gluten-free)
½ avocado, smashed
½ cucumber, sliced
½ tsp chilli flakes (optional)

Method:
Combine the tuna, Greek yogurt, Dijon mustard, celery, onion, pickle, and chives in a small bowl. Season with sea salt and black pepper and mix until combined. If looking a little dry add some extra yogurt until a creamy consistency is reached.

Spread the avocado across the cruskits. Then add the sliced cucumber. Spoon the tuna mix on top and garnish with a sprinkle of chili flakes, if desired.
