A nourishing winter side dish of golden roasted vegetables, finished with the vibrant green intensity of our first pressed Novello Extra Virgin Olive Oil.
Prep time is 15 minutes. Cook time is 40 minutes. Serves 4 as a side.
You’ll need ½ J*p pumpkin, peeled and chopped, 3 carrots, sliced, 2 parsnips, sliced, 1 brown onion, quartered, 3 whole garlic cloves, 30ml Novello Extra Virgin Olive Oil, plus extra for finishing, cracked pepper and Pepper & Olive Smoked Salt Flakes.
Preheat oven to 200°C. Place pumpkin, carrots, parsnips, onion and garlic on a lined baking tray. Drizzle with Novello Extra Virgin Olive Oil, then season with cracked pepper and Pepper & Olive Smoked Salt Flakes. Toss to coat, then roast for 35–40 minutes, turning once, until golden and tender.
Finish with an extra drizzle of Novello before serving.
