We were proud to team up with local SA brands to prepare our South Australian Lamb Cutlets for the thousands of patrons of the 2026 Norwood Food & Wine Festival.

Cooking like the rent is DUE (pt.2)!! 🔥 (Loaded Sweet Potato Recipe BELOW) ⤵️

Of course, is here to make achieving QUALITY at home very easy with their Beef Mince 🥩🇦🇺

It’s VERY well priced, tasty & SUPER versatile for your weeknight cooking 😋

Now, for the Sweet Potato + Mince Filling 🥩:

- 4 Medium Sized Sweet Potatos, Olive oil & Salt.
- 400-500g beef mince,
- 1 tbsp olive oil,
- ½ brown onion (finely diced),
- 2 garlic cloves (minced),
- 1 chilli (finely diced),
- 1 serve of taco seasoning,
- Salt & pepper to taste,

Also - you’ll need ingredients for your other toppings (I made guac, pico & a quick yoghurt chipotle) 🎉

Method 👇
1. Preheat oven to 200°C. Prick the potatoes, rub with olive oil + salt, wrap loosely in foil and roast 50–60 mins until soft.
- PS!! 🤔 Roasting time will depend completely on the size of the potato (bigger = longer).
2. While they cook, prep your other toppings! Fresh guacamole, some pico de gallo & whatever quick sauce you prefer).
3. Heat olive oil in a pan, cook onion, garlic + chilli for 2–3 mins until softened. Add beef mince, press it into the pan and let it sit to develop a deep brown crust.
4. Once crusted, break it up, add taco seasoning and a little water, then mix and cook until browned and slightly crispy. Once complete, taste for seasoning and adjust to your preference.
5. Slice open potatoes, season inside with salt, add butter and lightly mash. Load in this order: beef, cheese (optional), pico, guac & sauce.

Changing the beef mince game… save this Beef Arayes & Yogurt Sauce recipe! 🤤

Ingredients 👨‍🍳
Filling:
- 500g beef mince
- 3 garlic cloves, minced
- ½ small brown onion, finely grated
- ⅓ cup pickled jalapeños, finely minced and patted dry
- ¼ cup finely chopped parsley
- 1 tbsp tomato paste
- 1½ tsp ground cumin, 1 tsp paprika, ½ tsp ground coriander, ½ tsp ground cinnamon
- generous pinch salt and freshly cracked black pepper
- 2 tsp lemon juice
- 1 tbsp olive oil

Assembly:
- 3 large pita breads

Yoghurt Tahini Sauce:
- 200g Greek yoghurt
- 1 tbsp tahini
- 1 garlic clove, minced
- 1 tbsp lemon juice
- ½ tsp cumin
- generous pinch salt and freshly cracked black pepper,
- 1 tbsp olive oil
- 1 tbsp chopped parsley
- 1 tbsp honey

Method 🥘
1. In a bowl combine beef mince, garlic, grated onion, minced pickled jalapeños and parsley. Add tomato paste, spices, salt and pepper, lemon juice and olive oil. Mix thoroughly until evenly combined.

2. Cover and refrigerate for 20-30 minutes to allow the seasoning to distribute and the mixture to firm slightly.

3. Cut each pita in half to create 6 pockets. Gently open each pocket and fill with the meat mixture, pressing it into an even layer. Let the filling sit just over the edge, then gently press the pita closed so the meat spreads evenly inside. Lightly brush both sides with olive oil and place on a wire rack set over a tray.

4. Bake at 180°C for 8–10 minutes, until the meat is cooked through.

5. Heat a large pan over medium-high heat and add butter. Cook the arayes 1–2 minutes per side until golden and crisp. Press gently with a spatula while cooking so the meat sits evenly inside the bread and browns properly.

6. In a bowl combine yoghurt, tahini, garlic, lemon juice, cumin, salt and pepper, and olive oil. Mix until smooth, then stir through chopped parsley.

7. Serve the pita halves as they are, or slice each half again to create quarters. Serve hot with the yoghurt tahini sauce.
