Paddock to Plate Mobile Butcher

Paddock to Plate Mobile Butcher We come to you. Qualified butcher & Slaughterman service for farmers. We come to you and can travel anywhere in the far south coast of NSW.

Focusing on expert butchering & "stress free slaughter" of livestock. 30+ years of experience. We come to you

Paddock to Plate mobile Butcher service is a complete mobile butcher shop on wheels. From Bega to Batemans Bay NSW. We create special cuts and products

You tell us what you want and we will make it. We can create special cuts, such as silversides and rolled roasts to your specifications.

We can also create mince, sausages and have a sausage maker, mincer and cool room on site. We butcher for you

We butcher most farm animals including cattle, lambs, rabbits and goats. This convenient service is essential for hobby farmers and is also very useful for livestock farmers with distressed animals that can’t be taken to traditional slaughterhouses. We ensure stress free meats

We provide comfort that your animal is being treated humanely. Your animal can be taken straight out of the paddock to the mobile butchery, avoiding the stress of being transported to a slaughterhouse. The final product will benefit from this too, because the meat will not be toughened by the adrenalin that an animal produces under stress. Stress Free Slaughter

We provide a no waste guarantee

We guarantee that there will be no excessive wastage and we can butcher your animal nose to tail. We are happy for you to observe the butchering taking place if you would like to. We offer peace of mind

By rearing your own animals, you’ve already chosen to be aware of where your meat comes from, whether or not it’s organic and what it’s been fed. After all this effort, you want to be sure that you are eating your animal. We can give you peace of mind that the animal being butchered is actually yours. Experience you can rely on

Paddock to Plate brings over 30 years’ worth of experience in the meat industry (butchery and retail) combined with a background in farming, a commitment to ethical treatment of animals and the highest standards of professionalism in our interactions with customers.

🐂 Ever wondered what you actually get from a 500kg beast?

We’ve been checking out wholesale butcher prices while we had been traveling across WA and SA… and the savings of doing your own beast are huge.

A 500kg dressed carcass gives you around 325kg of take‑home meat — your steaks, roasts, slow‑cook cuts, mince and more.

Here’s the rough breakdown:

🥩 Prime cuts: 90–110kg
🍲 Slow‑cook & BBQ cuts: 70–90kg
🥩 Mince & trim: 100–130kg
🌭 Sausages: 20–40kg
🐕 Bones & fat: 100–150kg

Even at a low $12/kg average, that’s $3,900+ worth of beef.
Add in the premium cuts that retail for $30–$50/kg and the value jumps even higher - $4000 - $6000.

Doing your own beast means:
✔ No transport stress
✔ You get your meat back
✔ You choose every cut & pack size
✔ Nothing wasted — true nose‑to‑tail

Quality. Value. Respect for the animal.

🐂 How Much Meat Do You Get From a 500kg Dressed Beast?

A 500kg dressed (hanging) beef carcass will typically return 60–70% retail yield, depending on fat cover, bone‑in vs boneless cuts, trim level, and how much goes into mince or sausages.

Most industry sources put the average retail yield at around 65% of the dressed weight.

👉 So a 500kg dressed beast gives you roughly 325kg of take‑home meat.

That’s your steaks, roasts, slow‑cook cuts, and mince combined.

🐂 “Beef Eater” really tested the farm gear.

This big lad dressed out at 535kg, and he was that bloody hefty we had to chuck the tractor up on ramps just to get him off the ground.

Nothing like a beast so big it makes your machinery question its life choices.

Think we need a bigger 🚜!

WHY CHOOSE ON‑FARM BUTCHERING?

Because your animal deserves calm, your meat deserves quality, and you deserve peace of mind and transparency.

When you book Paddock to Plate Mobile Butcher, the entire process happens on your farm — from the first step to the last.

Here’s why more farmers are choosing on‑farm butchering:

🐄 1. Your Animal Never Leaves the Property

No trucks. No transport stress. No unfamiliar environments.
Your livestock stays calm in the place it knows best — and that means better animal welfare and better meat quality.

❄️ 2. Our Cool Room, On Your Farm

We bring the cool room to you and set it up on your property.

Your meat hangs right there on your farm for a full week (or however long you want it aged).

It never leaves your control.

🔪 3. We Return to Process On‑Farm

A week later, we bring our decked out full butcher truck back to your farm and break your beast down into:

• All the Cuts you choose
(cut up sheet provided)
• Mince
• Sausages (all gluten free)
• Rolled roasts
• Silversides
• Anything else you want

You can watch, help, or leave us to it — totally your choice.

👀 4. 100% Transparency

You see every step.
You know exactly what you’re getting.
No substitutions. No guessing. No stress.

🥩 Coolroom’s Filling Up While the Boss is Away

Big shoutout to Josh, who’s been absolutely flat out this week getting to all the farmers’ farms with the coolrooms to fill em up while Ash is on his way home from WA.

Ash is coming home to 5 full Coolrooms ready to roll again next week.

While we’ve been travelling through WA, one thing hasn’t changed - Ash and I cannot walk past an old shearing shed without going in for a look. Every station stay we pulled into, we found ourselves wandering off to check out the sheds, the yards, the old gear, and all the history sitting quietly in the dust.

There’s something special about seeing how other sheep farmers, graziers, and woolgrowers have done it over the years — the different layouts, the timber worn smooth by generations of hands, the rusty tin patched up who‑knows‑when, the wool presses and tools still sitting exactly where someone left them decades ago.

Maybe we love them so much because we’ve got our own old girl back home — our shearing shed is over 100 years old and still standing strong. Weathered, a bit crooked, full of character… and part of our story, just like these WA sheds are part of theirs. I haven’t found one older than ours yet!

Travelling through these properties reminded us why we do what we do.
Real farms. Real families. Real history.
And the privilege of being invited onto places where generations have worked before us.

To all the sheep farmers, graziers, and woolgrowers out there — we see you, we appreciate you, and we love the stories your old sheds tell.

Got an old shearing shed on your place — or a favourite one you’ve visited? We’d love to see it.

Fuel Prices Couldn’t Rise at a Worse Time for Farmers

Right now, crop farmers across the land are preparing and sowing — the most critical, time‑sensitive part of the entire year.
And just as tractors need to roll, fuel prices are climbing again.

People living in the towns might not realise it, but out here every single job depends on diesel:

• Every pass of the seeder
• Every load of fertiliser
• Every truck moving grain
• Every run to feed stock back home

No fuel, no sowing.
No sowing, no crop.
No crop, no feed — for people or for animals.

Driving through the Wheatbelt a few days ago we were lucky to stay with the West family on their property in WA. While we were camped up at the shearing shed, and sharing dinner together we can feel the pressures they are facing.

Paddocks ready. Farmers ready. But the cost of simply turning the key on a tractor has doubled.

And while some people in the towns are stockpiling and pushing prices even higher, farmers are trying to keep Australia fed — and keep their own stock fed at home — with costs that make no sense.

Farmers aren’t asking for special treatment. We’re asking for understanding.

This is the worst possible moment for fuel prices to spike.
Because if farmers can’t get crops in now, the whole country feels it later.

When it rains it pours !!
