Dry-aged 10 days, then roasted and glazed with caramelised orange and superior soy — a dish where technique meets true duck flavour.

F**k Wong Cockerel, elevated through technique.

Brining is a simple step that makes a real difference — allowing the meat to absorb moisture and seasoning before cooking. For cockerel, with its naturally firmer texture and deeper flavour from 100+ days of growth, brining helps tenderise while enhancing that true “gai” flavour.

The result: juicier meat, more even seasoning, and a beautifully balanced finish whether you roast, poach, or grill.

A small preparation step, but one that respects the quality of the bird.

Two weeks ago at — one of the highlights from our event series.

We’re incredibly grateful to have partnered with , , , and the RESIDENCE team for MFWF- Beak to Feet — an experience that brought together craft, ethics, and flavour in such a thoughtful way.

It was truly inspiring to see the creativity and technique of both Chef Robbie and Chef Jasper in action, showcasing every part of the cockerel across a refined five-course menu — a genuine expression of whole-bird cooking.

Even more meaningful was connecting with diners and food lovers from all backgrounds, sharing our story and passion for elevated poultry around the table.

From now until 29 March, we’re proud to see Aurum’s elevated poultry featured across a series of dining experiences with our incredible foodservice partners.

From our Corn-Fed Duck to F**k Wong Cockerel and Pullet, it’s truly special to see these birds interpreted through the creativity of chefs and brought to life on menus across the festival.

Each dish and experience curated tells a different story — of flavour, craftsmanship, and the beauty of thoughtfully raised poultry.

Over the next 10 days, our team will also be on the ground at selected events. If you see us, come say hello — we’d love to connect and share in the experience with you.

A heartfelt thank you to our chef and venue partners for championing elevated poultry and bringing these collaborations to the table.

With autumn now upon us, it’s the perfect season to enjoy comforting and nourishing dishes.

Our 100 Days Slow Grown Cockerel, prized for its rich chicken flavour and naturally bouncy texture, shines in timeless preparations like this Steamed Slow Grown Cockerel with Goji Berries — simple, wholesome, and deeply satisfying.

A dish that celebrates both the quality of the bird and the warmth of the season.

Our VIC Retail Shop will open with special hours this Sunday from 8:30am – 4:00pm, and will be closed on Monday for the public holiday. We will resume standard trading hours next Tuesday.

Our NSW Retail Shop will continue operating as per standard trading hours.
