We visited EV Slacks & Sons, a business we have been following on Facebook for some time. We appreciate their videos highlighting the differences between supermarket meat and locally sourced butcher products. On a sunny day, we arrived at the shop, where the staff were busy yet took time to give us a tour of their premises. They shared with us their 5-generation farm history. This is one of the few paddock-to-plate operations in the UK that breeds its own animals, operates its own abattoir and butcher shop, and has a cafe on site. We toured the kill floors, cool rooms, and stock yards where animals are kept before processing. We took a photo with a large knife and concluded our visit with coffee in the cafe. If in the area, we highly recommend stopping for a meal and trying their steak. Thank you for the experience it was a pleasure meeting you.

What a day sampling North Yorkshire pork pies and pastries. We called into a few of Harrogate’ finest butcher’s shops. We bought pork pies, Cornish pasties, steak pies and a Yorkshire favourite egg custard. I started off in Starbeck at Elite Butchers Gordon the owner has a wealth of knowledge of the meat industry was packing grass fed beef bone broth when I arrived. We had a good chat and after an exchange of a few recipes
I headed off to my next stop.
Didn’t get far before I tried Gordon’s pork pies just as years before superb pastry golden crispy full of flavour, meat tasty nice colour and not too compact and the jelly soft seasoned will melt in the mouth. Overall beautiful pie.
Onto Addyman’s butchers in Harrogate a lovely little tradition butchers shop run by husband and wife team. Keith looks after the meat Side and his wife looks after the baking side. I bought pork pies, Cornish pasty, steak pie and an egg custard all looked beautiful. The pork pie was presented well, nice shape good colour crispy pastry the meat moist great colour and the jelly super soft overall good pie.

Beef Chuck in a Roll with Gravy

Preparation.
1 kg chuck roast,
1 cube beef stock,
2 tablespoons beef tallow,
1 carrot, 1 onion, 1 potato, 1 tablespoon Dalmatian rub,
4 brioche rolls,
4 slices of cheese.

Heat the tallow in a pan and sear the chuck roast until golden. Transfer the beef stock to a slow cooker, add the chuck roast, vegetables, and Dalmatian rub, and cook on high for 5-6 hours. Following cooking, place the chuck roast in an air fryer for 15 minutes. Use a stick blender or potato masher to mash the vegetables and create a gravy. Slice the chuck roast. Fill the brioche rolls with the chuck meat, top with cheese, and dip in the gravy.
