We are a boutique cheese factory with a small retail space where we sell our fresh products. We use only local suppliers and are proud to offer our customers a great fresh products made with passion. At Casa Motta we enjoy delivering our customers Italian-style cheeses such as Buffalo Mozzarella, Fior di Latte, Filone, Burrata and Ricotta and more! Crepe with Casa Motta buffalo ricotta and smoked salmon.

Crepe:

2eggs
180g flour”0”
480ml milk
50g butter
1 pinch of salt

Filling:
200 g Smoked salmon
400g Casa Motta buffalo ricotta
2 table spoons of chopped parsley
4 table spoons of Parmigiano Reggiano
1 pinch of black pepper.

Preparation:

In a medium bowl, add all of the crepe batter ingredients : eggs, flour, salt and 400ml of milk. Whisk together until smooth. Expect the batter to be thinner than normal pancake batter. Refrigerate the batter for at least 30 minutes.

Lightly brush a 6 inch crepe pan or small nonstick skillet with melted butter and put over medium high heat. Ladle a few tablespoons of the batter into the center of the hot pan. Lift the pan, removing it from the heat and swirl so the batter coats the bottom of the pan in an even layer that’s as thin as possible.

Return the pan to the heat and cook until the edges are crisp and the batter loses its shine, about 45 seconds to 1 minute. using a nonstick spatula, flip the crepe and continue cooking on the other side, another 45 seconds.

In a second bowel mix all the ingredients for the filling plus the remnant milk and whisk until all the ingredients will be amalgamated.

Take one crepe and fill half size and turn the other half on top of that and again in half like in the picture.
Fill all the crepe and put all of them into a oven pan one after the other.

Add some butter on top like little flakes and cook in the oven at 180 for 15 min. just the time that they became gold.

Serve with a glass of white wine ! Buon appetito 🍽 !

PANDORO WITH MASCARPONE CREAM

Instructions

Blend our mascarpone with the icing sugar, using a hand held blender, until smooth and creamy.
Whip up the whip cream with some powdered sugar and vanilla, using again the hand held blender, until stiff peaks form.
Pour whip cream into mascarpone mixture and blend until smooth with mixer.
In a saute pan melt some butter and oil sugar, and fruit juice.
Add blueberries and simmer till blueberries soften, and sauce thickens a bit. Set aside.
Cut the pandoro into four sections.
Cut a section of the bottom to level the cake out, and cut that into cube and bake in oven.
When nice and toasted take out and set aside.
Starting with the bottom section layer a nice amount of the mascarpone whip cream mixture.
Drizzle some of the blueberry compote juice onto the cream and feather in with a skewer.
Add the blueberries.
The next layer turn upside down and put onto of the bottom layer with the mascarpone cream and blueberries, lining up the patterns.
Again layer with mascarpone and blueberry compote, and place the next layer upside down matching patterns.
The third layer is done the same.
The final layer has a generous amount of the mascarpone whip cream mixture and a feathering of the blueberry compote juice.
Crumble the toasted pandoro cubes, and sprinkle over the top.
Take a good scoop of the blueberries and make a nice mound on top and in the center.
Now get ready to serve, with some of the leftover blueberries drizzled over.
