Someone told me my mushrooms needed work last week. So I set to work trying to find the best recipe for large batch mushrooms. The key? Roasting them in a hot oven until the juices evaporate (a looong time), with entire heads of garlic, DO NOT SALT until the end, then plenty of salt and a sprinkle of fresh parsley. If you were unhappy with your last mushroom toastie, please come back and let me know if I have redeemed myself 🙏 🍄‍🟫
