With winter now upon us, we’re enjoying organic beetroot - vibrant, nutritious, nourishing, and perfect for the cooler months. Its rich earthy flavour shines in warming soups, hearty roasted dishes, colourful salads, or even pickled!

This week’s recipe for Beetroot & Barley Risotto by Clove Kitchen, has a nuttiness that perfectly complements the earthiness of beetroot. Together, they create
something rich and wholesome. Barley isn't as high maintenance as arborio rice, so you can walk away between absorption stages πŸ‘Œ

This is an earthy, wholesome dish that makes you feel good - just what we need as the days grow colder!

Serves: 2 | Time: 50min

Ingredients:

4 cups stock
2 Tbsp butter
1 onion, diced
3 cloves garlic, minced
4 leaves sage, thinly sliced
1 organic beetroot, peeled and grated
3 Tbsp red wine
1⁄2 cup barley
1⁄2 cup parmesan, grated
Salt & pepper, to taste

To Serve:
Tasmanian walnuts, chopped
Parmesan, extra, grated

1. Bring 4 cups (1 litre) stock to a low simmer in a saucepan.
2. In another saucepan over medium heat, melt 2 Tbsp butter and add 1 diced onion, 3 diced garlic cloves and 4 thinly sliced sage leaves.
3. SautΓ© until soft, then add 1 grated beetroot and 3 Tbsp red wine, and sautΓ© for another minute or so.
4. Stir through Β½ cup barley, then pour in 1 cup hot stock, add salt and pepper to taste, then reduce the heat to low and stir until all the liquid is absorbed.
5. Keep adding the stock, 1 cup at a time, until completely absorbed.
6. Add Β½ cup grated parmesan and stir to just combine. Taste and add more salt and pepper if needed.
7. Divide among bowls and serve with chopped walnuts and extra parmesan on top.

Sometimes the humble brown onion doesn't get enough love! Our Tasmanian certified organic brown onions are delish at this time of year in a classic French onion soup, stews and casseroles, curries and roasted with other vegetables πŸ§…

How yummy does this recipe for Cheesy Caramelised Onion Focaccia by I Am Homesteader look - easy to make and perfect with a bowl of soup!

Time: 1hr 50min

Ingredients:

DOUGH
1 cup warm water
1 tsp active dry yeast
2 Tbsp granulated sugar
β…“ cup olive oil
2 tsp garlic, minced
1 tsp salt, divided
2 Β½ cups all-purpose flour

TOPPING
2 Tbsp olive oil
1 Tbsp butter (or vegan butter)
3 large organic onions, sliced
1 tsp granulated sugar
1 cup cheddar cheese, shredded (or vegan cheese)

Method:

1. In a large bowl, combine yeast, water, and sugar. Stir and let it rest for 5 min.
2. In a small bowl, combine olive oil, garlic, and half the salt.
3. Pour half the oil mixture into the yeast mixture. Set the remaining oil mixture aside. Add flour to the oil and yeast mixture and stir to combine.
4. Add dough to a greased bowl and cover with a tea towel. Let it rest for 1 hour or until the dough has doubled in size. While the bread is rising, prepare the caramelized onion topping.
5. In a large skillet over medium heat, add the oil and butter. When hot, add the onions and sugar. Cook until the onions are softened (about 20 min).
6. Preheat the oven to 230Β°C. Pour the reserved oil mixture into the bottom of a 9Γ—11-inch baking dish. Use a pastry brush to coat the dish.
10. Add the risen dough to the baking dish and work the dough to the edges. Use your fingers to create dimples in the dough.
11. Top with the other half of salt, shredded cheese, and caramelized onions.
12. Bake for 18-20 min, or until golden and cheese has melted. Serve warm.
