A lasagne so tasty even meat-eaters will be asking for a second helping.

Eggplant Lasagne

TAKES 90 minutes | SERVES 8

What do I need?
• 3 large eggplants, sliced into 1 centimetre rounds
• 1/3 cup olive oil
• 1 tablespoon dried oregano
• 4 garlic cloves, crushed
• ½ bunch fresh basil, leaves picked, stalks finely chopped
• ½ cup red wine
• 2 x 400g cans whole tomatoes
• 50g unsalted butter, plus extra to grease
• 1/3 cup plain flour
• 800ml milk
• 1 cup finely grated parmesan
• 250g instant lasagne sheets
• 125g mozzarella, sliced

How do I make it?
1. Preheat oven to 200C. Place eggplant in a single layer on two baking trays lined with baking paper. Drizzle with 2 tablespoons oil, season and scatter over oregano. Roast for 35-40 minutes until cooked through.

2. Meanwhile, to make the sauce, heat the remaining 2 tablespoons of oil in a saucepan over medium heat. Cook the garlic and basil stalks for 1 minute or until fragrant and then add the red wine. Increase the heat to high and bring to the boil. Cook for 2-3 minutes until slightly reduced. Add the tomatoes and return to the boil. Reduce the heat to medium-low and cook for 10 minutes or until slightly thickened. Stir in ¾ of the basil leaves, tearing any large leaves. Remove from the heat and set aside. Squash the tomatoes with a fork.

3. To make the béchamel sauce, melt the butter in a saucepan over medium heat. Stir in flour and cook, stirring for 2-3 minutes until you have a thick paste. Gradually add milk, whisking constantly until smooth. Reduce the heat to low and cook, whisking occasionally, for 10 minutes or until thick and creamy. Stir through ¾ of the parmesan. Season.

4. Grease a 2.6 litre ovenproof dish. Lay one-third eggplant and tomato sauce over the base, then cover with lasagne sheets and one-third béchamel, then another layer of lasagne sheets. Repeat the layers twice more, finishing with a final béchamel layer. Sprinkle over the remaining parmesan and dot with mozzarella. Scatter with basil leaves, then bake for 40-45 minutes until bubbling, golden and cooked through.

This Cinnamon Streusel Cake is the perfect cosy treat for slow mornings or afternoon coffee breaks. A soft, buttery sour cream cake is layered with warm cinnamon sugar and topped with a generous crumbly streusel that bakes into a golden, crunchy crust. Finished with a light drizzle of sweet vanilla glaze, each slice is packed with delicious flavour.

Cinnamon Streusel Cake

TAKES: 1 hour | SREVES: 8

What do I need?

For the Streusel Topping
• ¾ cup plain flour
• ½ cup brown sugar
• 1 tsp ground cinnamon
• ¼ tsp salt
• 6 tbsp cold unsalted butter, cubed

For the Cake
• 2 cups plain flour
• 1 tsp baking powder
• ½ tsp bicarbonate of soda
• ½ tsp salt
• ¾ cup unsalted butter, softened
• ¾ cup caster sugar
• 2 eggs
• 1 tsp vanilla extract
• 1 cup sour cream

For the Cinnamon Filling Layer
• 1/3 cup brown sugar
• 1 ½ tsp ground cinnamon

For the Vanilla Glaze
• 1 cup icing sugar
• 2-3 tbsp milk
• ½ tsp vanilla extract

How do I make it?
1. Begin by making the Streusel Topping. Combine flour, brown sugar, cinnamon and salt in a bowl. Add butter and mix with your fingertips until the mixture resembles coarse breadcrumbs. Refrigerate while preparing the cake.
2. Preheat oven to 175C.
3. Grease and line a 23-centimetre baking pan.
4. In a bowl whisk together flour, baking powder, bicarb and salt. In a separate bowl beat together butter and sugar until light and fluffy. Add eggs, one at a time, mixing well. Mix in vanilla. Add dry ingredients to wet and mix in sour cream until a smooth batter forms.
5. Pour half the cake batter into the prepared baking pan. Combine cinnamon filling ingredients together then sprinkle this mixture evenly over the batter. Pour remaining cake batter on top and finish with the Streusel Topping.
6. Bake for 35-40 minutes, or until a toothpick inserted in the centre comes out clean.
7. Let cool for 15-20 minutes before glazing.
8. Make the glaze by whisking together icing sugar, milk and vanilla until smooth and pourable. Drizzle over the warm cake in thin lines.

You don’t need to travel to New York to enjoy a classic Reuben Sandwich. With the winning combination of corned beef, Swiss cheese, sauerkraut, and a delicious homemade dressing, this is unmissable. Make it today!

Reuben sandwich 🥪

TAKES: 15 minutes | SERVES 6

What do I need?
• 500 g cold corned beef, sliced
• 1 tsp olive oil
• 12 slices bread (rye is traditionally used)
• 4 tbsp unsalted butter, softened
• 1 cup sauerkraut, drained
• 12 slices Swiss cheese

For the dressing
• ½ cup mayonnaise
• 1 tsp Worcestershire sauce
• 1 tbsp onion, finely grated
• 2 cloves garlic, minced
• 2 tsp chilli sauce
• 1 tsp lemon juice
• 3 tsp horseradish sauce
• ¼ tsp smoked paprika
• Salt, to taste
• Freshly ground black pepper, to taste

How do I make it?
1. Prepare dressing first by combining all dressing ingredients in a small bowl and mixing well. Set aside.
2. Add olive oil to a frying pan over medium heat. When hot, add corned beef and cook until just heated.
3. Assemble sandwiches by adding dressing to the bread, then topping with corned beef, cheese and sauerkraut. Top with a second slice of bread and spread butter on the outside of the top slice of bread. Flip sandwich and add to a hot frying pan so that the buttered slice of bread is on the bottom. Butter the outside of the slice of bread that is now on top and cook the sandwich over medium heat for 2-3 minutes. Flip and cook for a further 2-3 minutes or until the cheese has melted and the bread is crisp.
4. Cut in half and serve immediately.
