Recipe // tag a friend who would love these ❤️

Ingredients/

2 cups desiccated coconut (finely shredded dried coconut)
12 medjool dates, seeds removed
1 teaspoon concentrated natural vanilla extract
pinch of salt

Method/

Place all of the ingredients into your processor and blend thoroughly, it may take a little while for the coconut to break down and the mixture to come together. Press the mixture firmly into a loaf tin lined with baking paper hanging over the sides. Refrigerate to set.
Eat and enjoy!

Snack Ideas 💡

Healthy coconut Rough //

Ingredients

1 + 1/2 cups shredded organic coconut
1/2 cup coconut oil
1/2 cup cacao powder
2 - 3 tablespoons rice malt syrup or pure maple syrup

Method

Place shredded coconut in a fry pan on medium heat and cook for 5 minutes until lightly golden and toasted.

To make the chocolate mixture, melt the coconut oil in a saucepan on low heat. Once melted, remove from heat, add the maple syrup, whisking briskly until well combined. Then add the cacao powder, stirring until well mixed through.

Place the shredded coconut into the saucepan and stir through the chocolate mixture. Spread evenly on a lined baking tray and place in the freezer for 30 - 60 minutes to set.

Slice in desired sized pieces and serve. I recommend storing in the freezer to keep it firm.

Healthy Ferrero Rocher's!

Ingredients👇
Makes 12 chocolate truffles
Chocolate Truffles
½ cup medjool dates
⅓ cup roasted hazelnuts (skins removed)
2 ½ tbsp raw cacao powder
1 can organic black beans
1 ½ tbsp coconut oil (melted)
1 tbsp maple syrup

Raw Chocolate👇
¼ cup coconut oil (melted)
1 tbsp maple syrup (or agave syrup)
¼ cup raw cacao powder

Decoration👇
12 whole roasted hazelnuts
¼ cup roasted hazelnuts (roughly chopped)
¼ cup bee pollen
Directions:
Chocolate Truffles👇
1. Add dates to a food processor and process until the dates become a paste. Remove and place into a small bowl.
2. Add roasted hazelnuts to the food processor and process for a few minutes until it becomes a nut butter.
3. Drain and rinse black beans and pat dry with a paper towel.
4. Add all remaining ingredients, including the date paste and black beans to the food processor and processor until smooth.
5. Put the chocolate truffle mixture into the freezer for 1 hour to set.

Raw Chocolate👇
6. Combine coconut oil with maple syrup.
7. Add raw cacao powder. Whisk with a fork until combined and chocolate mixture is smooth.
8. Set aside.

Assembly👇
9. Mix roasted hazelnuts and bee pollen in a small bowl.
10. Roll 1 tbsp of mixture into a ball and poke a roasted hazelnut into the centre. Roll into a perfect ball.
11. Dip into raw chocolate.
12. Roll into the hazelnut bee pollen coating.
13. Repeat with remaining chocolate truffles.
14. Freeze for 3 hours to set and enjoy! (If you can wait that long!!!)
15. These chocolate truffles keep really well in the freezer. Perfect eaten straight from the freezer with a lovely cup of green tea. Mmmmmmmm… delicious!
