Swallows Lane Farm Located on the edge of the Wimmera River in Dimboola Vic, our small farm embraces regenerative farming principles.

Our pasture-raised hens roam freely outdoors, producing fresh, wholesome eggs straight from the farm.

RECIPE - BEST PAVLOVA EVER! 🥚🍓

Ingredients
6 x Swallows Lane Free Range Egg Whites
1.5 cups Caster Sugar
1 tablespoon Corn Flour
1 tablespoon Vinegar
Splash of Vanilla
Spray oil
Whipped Cream
Strawberries
Mint Leaves
Icing Sugar

Instructions
1. Separate the egg whites from the egg yolks and place in a mixing bowl
2. Add caster sugar, corn flour, vinegar and vanilla to egg whites
3. Whip the mixture for about 8 minutes until it becomes shiny and the sugar is dissolved
4. Prepare a lined tray with a little spray oil on top
5. Spread the meringue mixture into the middle of the tray
6. Pre-heat your oven to 150 degrees celsius, then place the tray in the oven then immediately reduce the temperature to 120 degrees celsius
7. Bake for 1 hour then let it cool down
8. Once cooled top with whipped cream, strawberries, mint and a dusting of icing sugar

Top tips
1. Use room temperature eggs
2. Once cooked, turn off oven and open the door and let your pav cool inside the oven to prevent cracking
