Specialising in sheep & cow’s milk cheeses, Cambray are proud to be the only sheep milk producers in WA. Cambray Sheep Cheese is a small family-operated business which has achieved remarkable success since opening in 2005. The unique range, all awarded gold medals, includes soft white-mould cheeses, a traditional Greek style feta, and a variety of matured cheese including the famous Farmhouse Gold

, winner of Grand Champion Cheese and Champion Dairy Product at the 2006 Perth Royal Show. Cambray Sheep Cheese was borne from Jane’s passion for cheesemaking and Bruce’s experience with sheep farming. The health benefits of sheep milk were the deciding factor. Today, Cambray is a true family business, with son Tom all busy in the dairy. All Cambray cheese carries the official “Farmhouse” status in that every stage of manufacture happens entirely on the farm; only milk from a specially selected flock is used to produce the range of artisan handmade cheeses. Cambray sheep graze on lush pastures enclosed by native bushland and drink from natural springs, ensuring a pesticide-free environment of exceptional purity. From our farm shop here at Cambray, you can taste and purchase a cheese of your choice as well as browse our shelves for local products.

This is the part nobody sees when making cheese 🧀

Each wheel of hard cheese is coated 5 times by hand using a breathable cheese coat. The whole process can take over a week, allowing each layer to dry before the next is applied.

The coating protects the cheese while still allowing it to breathe and mature properly, without drying out too quickly.

Yes, it takes forever. No, we won’t stop doing it properly 🙌🏼

We are excited to announce that we won Champion non-bovine product at the recent Dairy Industry Association WA awards night for our Farmhouse Gold!

We also won gold for the 3 other cheeses we entered: Gouda, Blackwood Blue and Mount Folly.

Unfortunately we were unable to attend the awards night back in April, but were presented with the awards at our farm over the weekend 🏆🥇

Our orchard has done well this season and we currently have lots of beautiful fruit available at the farm shop.

Right now you’ll find:

• Jamming Figs – $15 for a 2.5kg box (perfect for preserves, baking or chutney)

• Fresh Figs (perfect for cheese platters)

• Bartlett Pears

• Avocados

Everything is available now at the farm shop, so pop in and stock up while the season lasts.

Silky smooth Camembert curds, being gently poured into moulds.

Over the next few hours they’ll be carefully turned to help the whey drain naturally. Tomorrow they’ll be hand salted and then off to the curing room to work their magic ✨
