Panettone is the Italian Christmas cake.
It comes from Milan and is traditionally made with natural yeast, butter, eggs, and dried fruit, then slowly fermented over days to create its light, airy texture.
Good panettone takes time. The dough is rested, folded, and risen multiple times, which is what gives it that soft crumb and delicate flavour. It’s not overly sweet, meant to be sliced, shared, and eaten slowly around the table.
This is the kind of cake Italians bring out at the end of lunch, with coffee or a glass of something sweet.
