This is a resource I use as part of my spring and summer forage tours. Every guest loves it. Low impact and sustainable - I like to “dry age” for a few days then whole on the bbq over charcoal - beautiful crisp skin and delicious flesh - if you’ve not tried it yet, put your bias to one side and give it a go - it’s a revelation!

Great news for fans of sustainable seafood: Bluethroat Wrasse from Tasmania has moved onto our Green-List!

The fishery uses low-impact methods like line and trap and populations in Tassie are healthier than other areas. Be sure to give this option a try next time you see it, and support sustainable fisheries!
