If you’ve ever stopped by Book Lovers Lane, chances are you’ve met Margot. She’s been volunteering here since it opened almost six years ago, helping keep the shelves stocked with books donated by the Canberra community.

Every book sold supports Lifeline Canberra, and as Margot says, hardly anyone walks through the door without leaving with a book. Come and take a look next time you’re at the Markets!

Fresh, easy and full of flavour - these fish tacos with avocado salsa are a great midweek dinner, with baked white fish, creamy avocado salsa and a zingy lime sauce.

INGREDIENTS

• 10 small corn or flour tortillas
• 600g white fish fillets, boneless (flathead or snapper)
• 2 tbsp olive oil
• 2 tbsp lime juice
• 2 tbsp chopped coriander
• ½ tsp chilli flakes
• Sea salt & black pepper
• 4 large iceberg lettuce leaves

Avocado salsa
• 2 avocados, peeled and roughly chopped
• 1 red shallot, finely chopped
• Juice of 1 lime
• ¼ cup chopped coriander
• 2 tbsp chopped mint leaves
• 1 jalapeño chilli, seeds removed and finely chopped
• 2 tbsp olive oil
• Sea salt

Lime sauce
• ½ cup sour cream or Greek yoghurt
• 1 tbsp lime juice

METHOD

Preheat oven to 200°C (180°C fan-forced). Combine the fish with olive oil, lime juice, coriander, chilli flakes, salt and pepper. Marinate in the fridge for 15 minutes.

For the salsa, mash the avocado with lime juice, then stir through the shallot, herbs, jalapeño and olive oil. Season with salt. Mix the sour cream or yoghurt with lime juice for the sauce. Bake the fish for around 5 minutes or until just cooked through. Meanwhile, warm the tortillas in a hot pan or grill.

Layer each tortilla with lettuce, avocado salsa and fish, then finish with a dollop of lime sauce. Shop everything you need at the Markets and save this one for an easy midweek dinner.

Creamy baked rice pudding with coconut milk, vanilla and star anise, topped with warm caramel pineapple. A little twist on a classic, perfect for those cooler spring days.

INGREDIENTS

• 400ml can coconut milk
• 800ml full-fat milk
• 2 tbsp muscovado or coconut sugar
• 1 tsp vanilla extract
• 2 whole star anise
• ¾ cup (150g) arborio rice

Caramel Pineapple
• ½ pineapple, peeled, cored and cut into bite-sized pieces
• ½ cup (110g) caster sugar
• ½ cup reserved coconut cream
• 1 star anise

METHOD

Preheat oven to 150°C. Scoop ½ cup of cream from the top of the coconut milk and set aside.

Combine the remaining coconut milk, milk, sugar, vanilla and star anise in a saucepan and bring to a simmer. Spread the rice over the base of a 1.2L baking dish and pour over the hot milk mixture.

Bake for 30 minutes, stir, then return to the oven for another 35–45 minutes until the rice is tender and creamy.

For the caramel pineapple, heat a large frying pan over medium-high heat. Add the caster sugar and cook until it begins to form a runny caramel. Add the pineapple and cook for 2 minutes before turning. Stir through the reserved coconut cream and star anise and cook for another 3–5 minutes until thick and syrupy.

Serve the rice pudding warm with plenty of caramel pineapple spooned over the top. Shop everything you need at the Markets!
