The Australian Butcher Team would like to formally announce a change in team management as we continue our preparations for the upcoming 2028 World Butchers’ Challenge in Australia in 2028.
We would like to take this opportunity to extend our heartfelt thanks and appreciation to Shannon Walker for his outstanding leadership, dedication, and contribution to the success of the Australian Butcher Team. Under Shannon’s management, the team achieved exceptional results and represented Australia with pride and professionalism on the world stage in both Sacramento and Paris.
Shannon’s efforts have been instrumental in building the team culture, setting high standards of excellence, and fostering strong collaboration among team members and supporters. While Shannon will be stepping back from his current managerial role, we are pleased to confirm that he will remain an active part of the Australian Butcher Team within Australia, continuing to share his experience, knowledge, and passion for the craft. His ongoing involvement will ensure the team’s values and commitment to quality continue to thrive.
Looking ahead, we are delighted to announce that Billy Gibney from Meat at Billy’s has been appointed as the new Team Manager. Billy brings extensive industry experience, proven leadership, and a deep commitment to the growth and success of the Australian Butcher Team. His enthusiasm, professionalism, and vision for the team’s future make him an ideal choice to guide us through the next phase of our journey.
We look forward to working closely with Billy as he leads the team in its preparations for the 2028 World Butchers’ Challenge and beyond. His appointment marks an exciting new chapter for the Australian Butcher Team, one that builds on our proud history and looks confidently toward future success.
