๐ฆ๐๐ฒ๐ฒ๐ ๐ฃ๐ผ๐๐ฎ๐๐ผ ๐ฎ๐ป๐ฑ '๐ฆ๐ฎ๐น๐บ๐ผ๐ป' ๐ฃ๐ฎ๐ป๐ฐ๐ฎ๐ธ๐ฒ๐ for Coeliac Awareness Week
Try our savoury pancakes using sweet potato flour and 'smoked salmon' made using carrot!
Ingredients:
Pancake Batter
๐ฅ 1 cup Lotus ๐ฆ๐๐ฒ๐ฒ๐ ๐ฃ๐ผ๐๐ฎ๐๐ผ ๐๐น๐ผ๐๐ฟ
๐ฅ ยฝ cup Lotus ๐๐๐ฝ๐ถ๐ป ๐๐น๐ผ๐๐ฟ
๐ฅ 1 tbsp Lotus ๐๐ถ๐ป๐๐ฒ๐ฒ๐ฑ ๐ ๐ฒ๐ฎ๐น
๐ฅ 1 can coconut cream
๐ฅ or 1 cup milk of choice
๐ฅ 2 tsp Lotus ๐๐ฎ๐ธ๐ถ๐ป๐ด ๐ฃ๐ผ๐๐ฑ๐ฒ๐ฟ
Cured Carrot โSalmonโ
๐ฅ 2-3 carrots
๐ฅ 1 tbsp apple cider vinegar
๐ฅ 1 tsp Lotus ๐ฃ๐ถ๐ป๐ธ ๐๐ถ๐บ๐ฎ๐น๐ฎ๐๐ฎ๐ป ๐ฆ๐ฎ๐น๐
๐ฅ Optional: a splash of vegan fish sauce or smoke essence
Method:
1. Peel the carrots then using a peeler get long strips and toss into a bowl.
2. Add the vinegar, salt and fish sauce or smoke essence to taste. Leave to cure while you make the pancakes or refrigerate.
3. Combine all the batter ingredients together by whisking or blending.
4. In a non-stick or well-greased pan cook the pancakes in batches.
5. Stack your pancakes with unsweetened coconut yoghurt with added fresh chopped dill, the cured carrot and lemon wedges. Sprinkle with Savoury Yeast Flakes and serve warm.
